DH gave me a Panini maker for Christmas last year. LOVE IT!!!! Melts cheese without burning bread. Any cheese and bread tastes great cooked on it! Kids love it, too. My fave- Hard Provolone, Spinach, Artichoke hearts, Roasted Red Peppers and Red Onion. Can get enough. DH fave- Roast beef and cheddar. Laughing,too - Kids will only eat American cheese on theirs. BORING!!

I remember seeing Rachael Ray make a panini using two skillets and a big heavy can of tomatoes. Seemed to work great and would be cheaper. I've never tried it though.

Angie,

If you like Brie, you will love this:

phylo dough square (about 4x4)
1 brie circle

Mix:
1/4 cup butter (melted)
1/4-1/2 cup brown sugar
1/4 cup chopped pecans

1. unfold phylo dough square.

2. place melted butter/sugar pecan mixture in an area in the middle of the circle about the size of the bottom of the cheese round.

3. place brie on top of the mixture and then fold the phylo dough to seal it. (Sort of wrap the whole brie and then I usually sort of twist the remianing dough on the top in a pretty way.)

4. place the brie loaf in the oven, you may want to put it on a cookie sheet with parchment paper under it to catch anything that may ooze out, but for the most part, it should stay together.

5. bake at 350 for about 25 minutes or until the dough looks golden brown.

6. I served this with wedges of pears and apples and you sort of just cut it like you would a pie and use the crust and then a bit of cheese and then the fruit. SO good. I think I will make this for Christmas now that I think of it!!! You can eat the leftover cheese on crackers or crusty bread. AND, feel free to adjust the brown sugar and pecans to your taste. I prefer a little more nuts etc and you can sort of drizzle them on top before you fold it bake it. It just depends on how sweet you would like it. (It isn't that sweet, just very fabulous!!)

Speaking of cheese...

I was wondering...

Annie just turned 7 and seems to have a fondness for all things cheese.

She wants a grilled cheese sandwich every morning for breakfast and sometimes as a snack in the afternoon. She wants mac and cheese for lunch.

I usually cook a good supper but I'm wondering if I'm breeding an unhealthy habit with constant grilled cheese sandwiches and mac and cheese. Or is it just her age?

She also eats lots of grapes, bananas, apples, and clementines throughout the day. Does this even the scales?

Yes, it does. And I would give anything to be able to make mac and cheese for my children everyday for lunch (I love homemade, but we do not have Velveeta or boxed here). My ds (almost 16) still loves to eat grilled cheese pretty much every day. And if I could supply the m-n-c fairly easily, I would.

We did try the ultimate grill cheese sandwich, but I could not find the green chilis. Otherwise, it was a great sandwich. Looking forward to an opportunity to try it with the chilis. I know it will add a great flavor!
