Ooh, subscribing. We're going vegetarian for our family Lenten things. My list of easy options right now says:
Black bean tacos
Butter chicken tofu curry

This is a family favorite. I have made this without the chicken and it is still great. I just add an extra can of chickpeas and a little extra veggies.
2 large onions, sliced
1tsp ground ginger
3 garlic cloves, minced
3 large carrots, diced (I use a 1lb bag of baby carrots)
2 large potatoes, diced
3 lbs chicken pieces (I use skinless, boneless breast)
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cinnamon
2 Tbps raisins (I use golden raisins)
14.5 ounce can diced tomatoes
3 small zucchini (you can also use some squash)
15 ounce can chickpeas (garbanzo beans)
2 Tbsp fresh parsley (or 1 Tbsp dried)
It says to saute onions with ginger and to brown the chicken, but I just throw it all in the slow cooker. Add chicken and veggies. Mix spices together and then sprinkle over the chicken and veggies. Add raisins and tomatoes. Cover and cook on HIGH for 4-6 hours or LOW for 8 hours. Add sliced zucchini, chickpeas and parsley 30 min before serving.
I know this sounds like it has a lot of ingredients, but it only takes about 20 min to get everything chopped and in the slow cooker. It is really good and, like I said, you don't need the chicken if you want to go vegetarian. I serve it with couscous. This is one of John Paul's favorite meals!!!

The American Heart Association created my new favorite fish recipe:

1 lb. boneless, skinless sole, flounder or whitefish filets (cut into four pieces if large)
cooking spray
1/2 c. chopped onion
1/2 tsp. minced garlic
1 can (reg. size) diced tomatoes
1 tsp. drained capers
4 peppercorns
4-6 dashes bottled red pepper sauce

Rinse fish and pat dry; set aside. Spray large skillet with cooking spray and cook onion and garlic over medium-high heat until tender.   Add remaining ingredients (except fish) and bring to a boil. Arrange fish on top and return to a boil. Cover and simmer at reduced heat for 4-6 minutes or until fish is cooked. Remove peppercorns. (Serves 4)

This dish is quick, easy, tasty and just 121 calories per serving.

I made this spaghetti last nightand it was very good and quite simple. Also cheap. Even the picky toddler liked it!

I made a sweet potato and parsnip soup a few days ago that was delicious. No measurements, sorry, but simmer parsnips and sweet potatoes in chicken broth until they're tender, add grated fresh ginger and turmeric powder, and puree it. It was very good, sweet and tangy and filling.

I made this FALAFAL last week and dh and I LOVED it....and about half of the kids liked it.

I quadrupled the recipe and there is NO WAY you can squash 60 oz of garbanzo beans with a FORK without losing all feeling in your arm!    Obviously with more beans you've gotta go to Plan B!

This is one of our favorite recipes. So yummy.

Antijitos

12" soft tortilla shell
* 1/2 cup shredded cheddar cheese
* 1 cup cream cheese
* 1/4 cup green peppers
* 1/4 cup red peppers
* 1/8 cup green onions

Directions:

(Substitute your favourite cheese or vegetables or add jalapeno peppers or hot sauce to personalize this dish)

Place the cream cheese in a mixing bowl and let it sit to soften at room temperature.

Finely chop (I put them in a food processor) the onions and peppers and then mix with cream cheese.

Lay the tortillas out on a flat work surface and use a spatula to spread a thin layer of the cream cheese mixture over the surface of the tortilla.

Sprinkle shredded cheddar cheese evenly over the mixture.

Roll the tortilla into a tube shape and score the top of the bread six times

In an oven pre-heated to 375º F bake until golden brown...my oven takes about 10-12 minutes.

Remove the roll from the oven and cut into seven pieces.

Serve with sour cream or your favourite dipping sauce.
