Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Once again I have no idea what is for dinner. I need to sit down with my cookbooks and do some menu planning and then the dreaded shopping trip.    So once again......I'm looking for some inspiration.

We're doing fish cooked with capers, lemon, and butter w/ baked potatoes and broccoli. Maybe some homemade bread if I get to that in time!

Fish-n-chips for the children (they love our local place just around the corner). For dh, I will saute some hake. I also brought crab that is already cooked and stuffed back into the shell (I cannot think of the name, but it is not stuffed crab). Trying to think of something to do with that as well. I will serve the fish with rice and some sort of veggie.

Oh, yum! I'm saving this for next Friday. Thanks, Suzanne.

I think I'm making scrambled eggs. Maybe I'll do egg burritos with salsa and cheese or something. My 16 month old is sick so whatever it is has to be easy and fast.

Homemade mac-n-cheese (which I smuggled some steamed pureed cauliflower into) and peas.

I just stuck yet another new casserole into the oven - pasta, cheese, broccoli and sun-dried tomatoes. I made foccaccia to fill everyone up in case the casserole bombs.

DH and I liked it a lot. Kids...lukewarm at best. It was good that I made foccaccia as well. The recipe is from How to Boil Water. I doubled it and left out the bacon (sigh).

Well I understand why you had to omit the bacon, being Friday in Lent and all, but I can certainly sympathize with the poor kids who missed it. Bacon makes everything better. I would probably eat cardboard if it had enough bacon on it.
