So....can you make up muffins and then bake them in the morning? I thought you had to rush them into the oven? Is there a certain recipe that you can do this with?

We made muffins this morning. We used Hodgsons Mill bran muffin mix. It doesn't have any ingredients I can't identify, so I feel okay about "cheating" by not making it from scratch. I doctored it by adding orange flavored dried cranberries and orange zest. From getting out the ingredients through cooking and clean-up was less than 20 minutes.

Yes you can make them the night before. The trick is to not add the baking powder and soda until the morning. I will usually mix everything except the egg and rising ingredients until I am ready to bake.

Also, the day before I just soak my oatmeal in half the liquid (leaving it out on the counter) and then the next morning add the other half of the liquid and cook it. It's ready to go and cooks up quicker.

2 things:

1. Many recipes freeze well -- freeze the cooked muffin and just thaw in microwave.


2. Refrigerator muffins. I can't find them on 4 real, but I thought I heard about them here. Wherever I heard about them, they had great reviews.   So... I admit I haven't tried this recipe . I just looked it up online since I couldn't find the recipe here.


Refrigerator Bran Muffins Recipe

Ingredients

3 cups all-bran cereal such as All Bran or Bran Buds
1 cup raisins
1/2 cup melted butter
1 cup very hot water
2 large eggs
2 cups buttermilk
1 cup sugar
2 cups all-purpose flour
1 cup stone ground wheat flour
1 tablespoon baking soda
1/2 teaspoon salt

Directions

Preheat the oven to 400 degrees.

1. In a medium bowl, add the cereal and raisins and then the very hot water. Stir in the melted butter. Set it aside to soak.
2. In another bowl, whisk the eggs and stir in the buttermilk and sugar until the sugar is dissolved.
3. In a large bowl, whisk the flours, salt, and baking soda together until well combined.
4. Make a crater in the dry ingredients. Pour in the egg mixture and the cereal mixture and then stir with a spatula until combined.
5. If you choose to make muffins now, fill well-greased tins two-thirds full. Refrigerate the remaining batter in a covered container in the refrigerator.
6. Bake the muffins for 14 to 18 minutes or until they test done. Let them sit in the tins for several minutes and then remove them to wire racks to cool. Freeze any leftovers.

Cereal never fills my girls up for long. Dd1 can eat 2-3 bowls before she even feels totally full. Muffins definitely fill them up faster and longer. I also do a bowl of oatmeal and some fruit, like bananas or strawberries. Or i will give them toast along with whatever they are having. They love bread so it doesnt matter if it goes with the breakfast or not. They'll eat it. Pancakes are also good and cheap to make, if you do it from scratch. If you have bread that might be going stale, you can make french toast too.

Growing up, we ate leftovers for any meal. I'd eat pizza for breakfast if thats what we had. I'd eat eggs and pancakes for dinner too. It just didnt matter to me.

How about fried rice for a quick lunch? I'm asian so again, that's pretty normal to me. We put in bacon, hotdogs or vienna sausages, eggs, chopped carrots and peas etc. into our homemade fried rice. You could also put in shrimp or shredded chicken etc. It was quick and yummy. If you know how to roll up eggrolls, you could also make them before hand and then fry them up for quick lunches. Okay, not exactly healthy but quick and yummy.

Another idea for breakfast or a snack is homemade granola bars with yogurt or by itself. HTH!!
