It is my fond wish to have the family wake to warm freshly baked muffins. Does anyone have a recipe for a batter that can be kept in the refrigerator for a few days?

The problem is that the chemical reaction that makes muffins rise is going to continue in the fridge. After a short time, the muffins will not rise when cooked, and that's just unpleasant . You can make a mix that will keep, and just add milk (sort of a home made Bisquick). Try this one.

6 Week Bran Muffins

12oz (6C) Bran Cereal
1T baking soda
5C flour
2t cinnamon
1t salt
1C sugar
4 beaten eggs
1C oil
1QT buttermilk

Mix all the dry ingredients, then add the liquid ingredients. Mix well. Bake at 400* for 15-20 minutes.

Batter can be stored in fridge for up to 6 weeks.

We LOVE these & have them all the time.

Thank you Jenny! I think this is the recipe my grandmother used to make. She always had a huge rubbermaid container of batter in her fridge and every morning she'd bake fresh bran muffins for my grandfather. I had forgotten about that. Oh were they good with a cup of tea!

MacBeth, thanks for the dry mix recipe too. Sounds like a great one to keep on the shelf indefinitely.
