My husband signed me up for his department's Christmas cookie "bake-off" next month. So he and I have been poring over holiday magazines trying to decide what kind(s) to make.  We are torn between approximately 30 different kinds of cookies - they all look so good! 
So I told him I would ask my friends here, what are your favorite kinds of cookies at Christmas - to eat and/or to make?

oh my gosh, Dawn. too many!
some of our favorites: (most of these can be found at epicurious.com)
stephanie schrader's walnut cups
mocha pecan balls
spice cookies -- but i can't remember which one
biscotti with cranberries, white chocolate and pistachios
rainbow cookies (the best one i made last year!)
these chocolate rings with peppermint candy melted in the middle
spitzbuebe
linzer cookies
sugar cookies and butter cookies made into different shapes, sizes, with colored decorations, etc.
gingerbread, of course
not really cookies, but:
rum balls
chocolate brandy balls
sugarplums
i'll be featuring all of these (once i start baking, after thanksgiving) at bakingdelights.com.

Two favorites around here are Eggnog Cookies & Chocolate Hazelnut Cookies (carmel in the middle).
My mom never made anything except her traditional German cookies. She called me one year & found out about the Eggnog Cookies.
She now makes them each year, and since she has always made & ate the same cookies for 60+ years...that's saying a lot.

Michaela, would you share the Eggnog cookie recipe if you have a chance? My husband's aunt used to make these "eggonog logs" that were out of this world - but she'd never give up the recipe! He would be thrilled if I could make something like them this Christmas.

I have three favorites, Peppermint Pinwheels which look so pretty on a plate, my Grandma's Kolachki and Soft Gingersnaps with sugar tops.
I am getting hungry just reading this thread !

Just sit down with Martha Stewart's "Handmade Holidays" issue and choose 5 or so of those -- the peppermint marshmallow are on my list to try with the kids, but she's got relatively easy but yummy cookies there! And they look so good!

I love the cookies in the Jingle, the Christmas Clown book. They melt in your mouth and a hint I've learned is to not use saffron threads (they're so expensive), but to use turmeric, lightly. In this recipe, the saffron is mostly for making the stars yellow, anyway. Snowballs are also really scrumptious.

Yes we could, Tina! That is, if people are interested.
Food bloggers have done it, and I've participated twice -- it's called "BBM" (blogging by mail) -- it's so neat and you get all kinds of goodies that you can't get locally, plus letters, kinda like a penpal:D Last year I got baked goodies and jerky from Singapore, and some items from England -- lots of fun!
If there are enough people who want to do it, we can certainly set it up. The only thing is it may be too much to add to people's potentially busy schedules already. But I'm game if anyone else is.

What if we did it during the doldrums of January -- make it during the official Christmas season (when most of us have backed off on all the Christmas stuff -- Americans don't even get past Christmas day, so I always feel virtuous even to get past Jan 6th!).
We could do recipes that we knew were well-received.
I'm game if anyone else is??????

This is one of our favorites too!!! (and we don't use the saffron either for the same reason).
We also like:
Snickerdoodles
Christmas Tree shaped spritz cookies
Gingerbread men (I have an awesome recipe for soft ones)
Peanut Butter blossoms (peanut butter cookies with a Hershey Kiss on them)

I always got the girls the ballerina hazelnut cookies for their stockings......and now, for the last three years, my usual store has not carried them..........  ........we really miss them
