I am not a huge fan of mayo, but my dh and dd are. I switched to Canola Mayo a few years ago, but now I'm looking to get away from canola. I found this Wilderness Family Naturals I tried to see if they had samples, but they don't. I also don't love that cane sugar is in it. But, I love the evoo, tahini, and coconut oil.

Does anyone have a fave recipe or product using coconut oil or olive oil?

I have made it using half coconut oil and half light olive oil and it's good. The recipe I used had no sugar - just oil, egg, vinegar, dry mustard and salt. I have tried it with EVOO, but it had a bitter taste. That may be less of a problem if you use a better quality oil, but mine was a cheapie brand.

Here ya go:

1 whole egg
1/2 tsp dry mustard
1/4 tsp salt
2 TBS rice vinegar (you could probably use any mild vinegar or lemon juice)
1/2 C coconut oil
1/2 C light olive oil

Combine everything except the oil in the blender. Add 1/4 cup of oil and turn the machine on medium speed. Add the rest of the oil SLOWLY in a thin stream until it is all incorporated.

And that's it! :)
