There are mornings when we jump from our beds to the car and don't have time to eat breakfast. Would anyone share their recipe for an oatmeal breakfast cookie recipe? Other ideas?

This is one I made up..
Oatmeal Bars
1/2 c oil
1/2 c applesauce
1/2 c brown sugar
2 eggs
1 t vanilla
2 t cinnamon
1/2 t baking soda
1/2 t baking pwd
1/2 t salt
1 1/2 c. whole wheat flour
3 c. oats
1 c raisins (optional)
mix together and spread in a greased 9x11 cake pan. bake at 350 for 20 min.

This is our favorite oatmeal cookie recipe from Moosewood Restaurant New Classics cookbook. I usually double it! We also enjoy the 30 Day Gourmet granola bar.
1/2 c. light brown sugar, packed
1/4 c. sugar
1/2 c. butter, unsalted, room temp.
1 lg. egg
1 t. vanilla extract
1 1/4 c. rolled oats
1/2 c. unbleached white flour
1/2 c. oat bran
1 t. cinnamon
1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
3/4 c. raisins
Preheat oven to 350. Cream together brown sugar, granulated sugar, & butter until light and fluffy. Add egg and vanilla and mix well.
In a separate bowl, combine oats, flour, oat bran, cinnamon, baking powder, baking soda & salt. Add to the butter mixture and stir just until blended. Mix in the raisins.
Bake for about 10-15 ninutes, until golden and just firm to the touch. When the cookies first come out of the oven they're soft and a little delicate, so carefully transfer them to racks.

They aren't chocolate so hopefully I won't eat the first pan myself!

Rats... guess I'll have to make them myself. Your in MN too... maybe I should just invite you over to have some and Paula and Margaret could come too (sorry... those are all the MN 4RL'ers I know... but you'd all be welcome)! We really should think of planning a spring get together.

We like Rachel Ray's No Bake Granola Bars. Of course we adapt the recipe, I am loving dried cranberries and white chocolate instead of the raisins and plain chocolate chips while my husband liked the new dark chocolate M&M's with dried cherries.
