Tacos with all the fixings are on the menu here. I think we will be eating late after soccer and babysitting jobs. I might even make some kid friendly Margarita's.

Mmmm.... Rebecca's chalupas look good! But I don't have pork. And I don't have hamburg for tacos (grocery store night).

I might just make bean burritos and quesadillas!

I'm going to be out of the house from 10:30 until after 4pm. We're having Hamburger Stew in the crockpot.    Not very Mexican, but we'll make up for it later in the week with Chicken Enchiladas on Thursday, Chicken Tacos with beans and Mexican rice on Saturday, and Breakfast Chilaquiles on Sunday morning.

I love Mexican food.

We're making quesadillas on my nifty Quesadilla Maker. The boys will have plain cheese and dh and I will be having chicken and mushroom. I'm also going to make some home made guacamole - avocado, onion, tomato, lime juice, and cumin. Yum!

Since dh is playing golf in a tournament and having a scrumptious meal, I was just thinking leftovers, although I know ds loves tacos. Maybe rethink this.

A pinata would be fun to do. The Martha Stewart Craft of the Day had instructions on how to make one, but since it's an overnight thing, how does that help me?

Have you seen that Hidden Valley commercial where there are carrots and celery sticks inside the Pinata? How to have some options that aren't teeth ruining candy. Ds has enough of it. Packages of raisins (although the dentist says those are bad for teeth, too. )? Granola bars, fruit leather...

I just buy frozen margarita mix and skip the tequila. I serve it in our pretty magarita classes and add some salt to the rim. Lemonade slushies work too!

My kids love Margarita slushies...and I get the tequila.

Since we are having one of those busy days, we are (seriously) going to drive through Taco Bell for 5-5. I am hanging my head for shame as I admit that, but we have to go from one thing right to another, and there is no other time for diner tonight except in the car. Ugh.

I forgot what day it was too, and decided on Provencal Chicken with brown Rice - it's from my 29 minutes to dinner Pampered Chef cookbook! Are green olives appropriate?

I have to be very careful of my menus lately, as Tums has seemed to become my after-meal "treat" lately. I hope this meal won't be too bad with the tomatoes, but I KNOW that tacos would be terrible for me. The kind I enjoy are fish tacos with avocados and a broccoli slaw. DH and I really enjoy those.

Crockpot salsa chicken - even though I don't have any corn to add to it. Thanks, Mary Chris, for the reminder! I saved some shredded cheese and tortillas from being eaten at lunch so we'll have them with the chicken, and I found a can of refried beans on the pantry shelf. Voila! Insta-Mex!
