This is our all-time favorite recipe! I do believe it is the food closest to heaven!!   

I wanted to share it with you.

Try it and let me know what you think! It is excellent for tea time! Vanilla Hazelnut after dinner tea from Celestial Seasonings :)MMMMMMMMMMMM!!

Rhubarb Crunch

Crumb topping
Ingredients:
1 cup sifted flour
¾ cup uncooked rolled oats
1 cup brown sugar, firmly packed.
½ cup melted butter
1 tsp. cinnamon

Fruit mixture
Ingredients:
4 cups diced rhubarb
1 cup sugar
2 tbsp. cornstarch
1 cup water
1 tsp. vanilla
Whipped cream (optional)

1. Start sauce first.
In small sauce pan combine:
Sugar, cornstarch, water, and vanilla. Cook, stirring until thick and clear.

2. Mix crumb topping together until crumbly. Press of crumbs in greased 9” layer pan.

3. Cover with rhubarb.

4. Pour sauce over rhubarb.

5. Cover with remaining crumbs.

6. Bake at 350 degrees for one hour.

8 servings

WE usually double the recipe and make it in one of those glass pans.....13X 15?? not sure....just a big pan!

oooooh, thanks chari! i did not see any rhubarb yesterday when i went grocery shopping, but i'll be on the lookout for it next time!
