Has anyone tried Pamela's baking mix to make cinnamon rolls? I'm trying to find a rather simple GF recipe that doesn't involve mixing too many different GF flowers.

This may seem random and round about, but a friend with celiac who used to make cinnamon rolls often recently posted about the amazing rolls her daughter made. She used the gf pizza dough recipe from Healthy Bread in Five Minutes a Day and used potato flour for rolling. I actually have the book from the library, but it arrived about the time I found I was expecting, and so I haven't had a chance to try it myself.

Thanks Eva and Lindsay. I've never seen Chebe Cinnamon Roll mix but I am going to a different grocery to see if they have it today! That looks easy!
Lindsay, I like the pizza dough idea. I often get a GF biscuit mix that we make doughnuts with and sometimes pizza crust. I wonder if that would work the same.

BOb's Red Mill BF pizza dough mix has a recipe on the bag for cinnamon rolls. I haven't tried it, however. I keep a few GF mixes around here, even though none of us are currently GF eaters. I like the Bob's products...

I just made the Pioneer Woman's recipe using the Namaste biscuits pie crusts and more (eliminating her added baking powder), and it was a hit! I used the whole bag of flour.

I saw where others used their regular perfect flour mix in her recipe, and I assume that would work well, too.

I love Bob's pizza flour - never tried to make cinnamon rolls with it, but have a feeling I will be popular around here this weekend when I try it!   

On Bob's mixes - we have a health food store in town that sells it in bulk and it is around $1.50/pound (which is extremely inexpensive compared to the packaged version). They also have Bob's bread mix and all-purpose for around the same price. Just something to check into if you have a bulk section.
