I made this crock-pot lasagne today - well, I made substitutions to suit our family but the idea remains intact.
Here is the recipe as I received it.
**Crock Pot Lasagna**
Ingredients:
*½ pound ground beef (I use ground round or chuck)
*¼ cup chopped onion
*Olive oil
*Basil
*Salt (seasoned or garlic salt if you want)
*Pepper
*One large jar of spaghetti sauce of your choice
*One 8 oz. package of lasagna noodles or you can use ziti noodles (uncooked)
*16 oz. shredded mozzarella cheese (I buy the block and shred it)
*15 or 16 oz. ricotta cheese
*¼ cup milk
*1 egg
*1 cup parmesan and/or Romano cheese (stores now carry a blend of 5 Italian cheeses I usually get that)
Directions:
Sauté onion in a little olive oil until slightly browned. Add ground beef, about ½ tsp basil, and a little salt and pepper. Brown meat. Drain fat (if you drain fat once half way into cooking it helps to brown the meat better then, drain one more time if you need to). Turn off burner and add the spaghetti sauce. Mix to blend. Set aside.
While meat is browning you can mix up the ricotta, milk, and egg. Once blended, add the mozzarella cheese and parmesan cheese however, keep out about ½ - ¾ cup of the mozzarella and about ¼ cup of the parmesan to sprinkle on top.
Grease the crock pot with vegetable shortening on the bottom and sides. Put about 1 cup of sauce in the bottom. Layer 1/3 of the lasagna noodles breaking to fit or just layer 1/3 of the ziti noodles over the sauce. Smooth 1/3 of the cheese mixture over the noodles. Pour about 1/3 of the remaining sauce over the noodles and repeat with more noodles and cheese until you end with sauce on top. You should only have 3 layers. Top with the remaining cheeses now or just for the last hour of cooking.
Cook on LOW heat for 4-6 hours. I took a skewer and poked it down the middle after about 4 hours to check. Mine is usually done in about 5 hours.
You can make this up the night before if you want put it in the frig if you have a crock pot that comes out of the heating unit. Then, just turn it on around noon. You will have dinner ready by 5 or 6pm!
Double this, you get A LOT of lasagna!...piled very high!! If you want more meat, cheese, or sauce... you can add a little more.

OK, now you've got me interested! I am not a crock-pot chef much to my husband's dismay . It's kind of like the casserole thing, I just don't do it . But now you've got me intrigued, really Lasagne in the crock pot, I'll have to try it. My husband would simply die and want to marry me all over again if he knew I was going to start using the crock pot we received as a wedding gift 12 years ago ! Yes we've actually moved it 4 times and I think I've used it once . Anyway it will be a new revolution in the Henning household, Lasagne Ala Crock Pot . Thanks for the other links too, they look, well uh, interesting!

I'm resurrecting this thread to get some more ideas for slow cooking. It seems from other threads that some of you moms are experts at the crockpot. I finally received a 7 quart Slow Cooker for Christmas per my request. Part of my resolutions is to resurrect my meal planning (it got a little waylaid since Grandma's funeral and the holidays) and organize my days and cleaning.
Last night was pot roast -- dh's request, and he loved it. I loved the ease. I have a few recipes to try, but I'm looking for no dairy, no wheat and no egg recipes (and no mustard and cinnamon). I can adjust some, like our pot roast I didn't dredge in flour last night. Any books, sites, recipes to share, please?

Thanks for resurrecting this thread, Jenn. I need to start using my crockpot more -- I'd much rather "cook" in the morning than the evening!
My favorite place for any recipe is All Recipes. They have a dedicated slow cooker section. You can get even more hits if you type "slow cooker" as a search term on the all recipes site. The main reason that I like it is that others have reviewed the recipes. You can read what they thought, how they tweaked it, etc. You can use it for free and if you join (also free) you can save and categorize recipes.

I haven't tried this, but want to: Hawaiian Pork
Easy Taco Soup
A lot of people love the Fix It and Forget It books. (At least some of them are available at the Fairfax County public library.) I thought the first one had too much processed food and too many repeat recipes, I am going to check out the others.
I know that you are great at searching, but I took the liberty to check Amazon. It looks there is a slew of well rated books there.
I'm looking forward to what other, more experienced users have to say.

I appreciate the help and hints on the books. When I thumb through the crock pot cookbooks, there are a lot of casserole style foods, and not much without dairy. Frustrating. I'd hate to waste money on yet another cookbook that I can't use completely. I don't mind making side dishes...it doesn't have to all in one complete meal in a crock pot.
I'll spend some time going through the websites, but if anyone has some tried and true favorites, I'd love to see them!

I too, prefer the "tried and true" of my friends. I do like the pot roast and taco soup above. Also this Chicken Chili. I always add more beans. Look at the comments on all recipes for more ideas for how to modify this recipe. Also, there is an ingredient search on all recipes that you can request that the search filter OUT recipes with certain ingredients. For instance, you can search for "Beef" recipes with no flour,eggs, milk, sour cream (limit is 4) and narrow it to the crock pot section. Then I look at recipes that have 5 stars average (sometimes I look at 4 stars). Some of your allergies might still show up, but it helps a lot. Example Search.

In this book, the author has a method of incorporating "pocket pouches" which cook sides/vegetables along with the main dish. Even easier clean-up!
Doing a quick scan, it looks like a lot of her recipe's have no dairy. She has a definite healthy-bent in her recipes, also.
I really need to start using my crockpot more often, too. Dinner time here is always a mess

jenn, not about crock-pot meals but i found a flour subsitute my family loves! you probably use it already but i thought i'd post here anyway. it's the gluten-free baking mix from bob's red mill. i've used it for fried chicken and catfish, etc. and it was a hit! i did try it for a stew (coating the meat before searing, etc.) and it didn't stay on as nicely as regular flour, but the end result was yummy so no complaints here.

Hi Jenn,
Here is the first crockpot recipe I ever tried back when I was a newlywed with a brand new bridal-shower-gifted crockpot. I really like it. It came from the little book that came with my crockpot.
Chicken in a Pot
2 carrots, sliced
2 onions, sliced
2 celery stalks with leaves, cut into 1-inch pieces
3 lb. whole broiler/fryer chicken
2 tsp. salt
½ tsp. coarse black pepper
½ cup water, chicken broth or white wine
½ - 1 tsp. basil
Put carrots, onions, and celery in bottom of crock pot. Add whole chicken. Top with salt, pepper, and liquid of choice. Sprinkle basil over top. Cover and cook on low 8-10 hours (high 3 ½ - 5 hours, using 1 cup water). Remove chicken and vegetables with spatula.
You can use leftover liquid and chicken to make soup.

Here is another:
White Chili
Mix or match the following ingredients and either cook all day in the crockpot, or just heat up on the stovetop if using already cooked chicken. You will have to decide amounts based on your family. I make it thick, like stew. You could also make it thin, more like soup.
Chicken broth (or chicken bullion and water)
Chicken (use either whole chicken and remove bones later or boneless chicken breasts)
Cannellini beans or Northern beans
Sauteed onions and garlic
Cooked rice
Corn
Cumin
Salt and pepper
Garnish with shredded cheese, if desired
[Other suggested ingredients that I have never tried: Hominy, Chick Peas, Green Chiles, Red pepper, Cilantro, lime juice, and/or Cinnamon]
(Jenn, I am not ignoring your dairy and cinnamon allergies. I just copied the entire recipe here in case someone else is interested. )

Thanks, Irene! We made this week. Ds and I got sick, and it was the best thing to have around. Dh is raving about it. This is a keeper recipe. I added a bit more liquid (broth) and some garlic.

Here are three of our favorites
Great Meatballs
A large package of frozen meatballs (or home made)
1 can whole cranberry sauce
1 jar chili sauce
Place in crock pot & cook on high or low depending on when you put it in & when you need it. We eat this over rice or mashed potatoes.
Shredded Roast
1 roast
2 packages of dry Italian dressing mix
2 cups water
Place in crockpot & cook on high until meat is done. Shred with 2 forks & serve. We eat this on hoagies, over rice or mashed potatoes.
Easy Taco Chicken
Frozen chicken breasts
Package of taco seasoning
Place both in the crock pot & cook until chicken is done. This does not take a long time if you use the frozen bagged ckn breasts that are thin. We use this in tacos, enchiladas, quesadillas.

I would not survive without the crockpot. One hint for you who freeze meat. If you start your meat the night before on low then it is ready by dinner time the next day. I can generally remember to start dinner before going to bed but always forget to take meat out to de-frost! The only problem we now have is that we either have to run two crock pots at the same time or get an oblong one big enough to fit 2 pot roasts in at the same time.
