I am trying to put together a unit study on nutrition and dietetics.
Has anyone done or our like to share some ideas

My first thoughts where to discuss the 5 food groups 6 nutrients.
Make a pyramid of the food groups
Examples of each
I would like to have depth to this study.
Probably progress to food preparations and processing.

How old are we talking to teach this to?
There are SO many different ways to eat. Paleo, Nourishing Traditions, vegetarian, vegan, gluten free, raw....

What ever you follow, I would absolutely make a pyramid of sorts. Can you also visit where some of your food comes from? A farm? Can you get and raise chickens? (We cannot here ) We did take a tour of a goat farm where they make feta and other goat milk products.
Be weary though, it upset me a lot to where I stopped eating all animal products for months.

The Food Groups by the FDA have changed so often, I personally would not use that as my basis. There is a lot of MISinformation given through the FDA.

I'm not going to push a type of eating, but there needs to be basic understanding of the make up of foods and how our bodies use the calories, carbs, fats, protein, nutrients, vitamins and minerals, etc.

There was this old conversation on Nutrition text which might be helpful.

Food and Nutrition book by Prevention and Rodale in 1984 is the text that Our Lady of the Rosary School used for their Home Ec nutrition for high school. Yes, it's older, but basics nutrition doesnt usually change.

But after that, there needs to be a translation onto eating healthy and real food. Unfortunately, industrial farming, processed foods, and grocery stores has made a serious disconnect. So it is helpful to deconstruct foods and understand "how it's made" and how it works for us, and what forms are less nutritious than others.

I loved Real Food by Nina Planck. Her approach was logical and not controversial.

And perhaps reading through books by Michael Pollan (with some open eyes, because his early books he makes the conclusion we should be closer to vegetarians...now he's come full circle).

Perfect Health Diet (and their website) has a whole lot of science to explain how the body works with different foods. That aspect is helpful, EXCEPT I am not convinced there is any data from early man to prove the Paleo diet. Much of the conclusions there is conjecture, not science.

And I think the book Good Calories, Bad Calories and other titles written by Gary Taubes is excellent.

I do wish there was something written that doesn't necessarily push any kind of diet or agenda (harming animals, environmental stuff) nor is FDA based, but looks at basic food and nutrition and gives instructions.

I love the old books by Adelle Davis, because she really broke down nutrition...but some view her info a bit radical. I don't, and it's nice to read Nina Planck refer to her.

We are considering getting the DVD Course "Nutrition Made Clear" by Professor Roberta H. Anding (Baylor College of Medicine and Texas Children's Hospital) it is a 36 lecture course sold through the Great Courses site. It is currently in the sale catalog for $54.95. Nutrition Made Clear link

In addition, I think that it is helpful to add an exercise on studying the advertising of foods. For instance, I'll have my daughter keep a diary of the types of food ads she hears on the radio, sees in magazines or on TV, etc. It is interesting to see the types of ads that are shown during various parts of the day (especially for fast food restaurants) and the misleading images on ads for snacks (especially aimed at kids). We did this a few years ago when we worked on a 4th grade nutrition unit and it was eye-opening,

I am putting this together sort of from my memory of my home science course I did as a teenager at school.

Diana Advertising is important item to add. We talk about this regularly. But as an assignment will be good I will be looking into the DVD.
