Stef, how do you roast fish? Just a little olive oil and put it in the oven? Wrapped in parchment? foil? Seems like that would steam it. I don't think I know how to roast fish. Would you share what you do?

I'm not Stef, but while I've never cooked a trout, we bake/roast salmon often. My husband actually prefers it to be a little dry and flakey (but with butter!) to poached or steamed, so, we bake it "longish." I just put it on the pan (or in a glass dish), salt and pepper, put dabs of butter, squeeze some lemon, sprinkle some dill, and stick it in the oven (350ish) for 20 minutes or so.

Because of my husband's preferences, I will turn off the oven, but leave the fish in for a bit, but you don't *have* to dry it out, lol. (My husband also likes his eggs cooked completely dry, so I sacrifice being a gourmet to please him )

yes, jen, very similar to lindsay's instructions. higher heat though, 400 degrees (for whole trout anyway). some herbs in the cavity and chopped on top, lemon juice, salt and pepper. i sometimes follow julia child's intructions and coat lightly in flour, then turn halfway through cooking time.

as for salmon, i marinate it first in the olive oil, THEN roast it. it turns out so moist that way.

i do teriyaki salmon this way too -- but use coconut oil or canola oil instead of olive, plus soy sauce, grated ginger and a bit of sake, a bit of sugar the last 5 minutes of roasting, or it will burn.

COD is awesome roasted! with some potatoes, kalamata olives, parsley, onions, lemon juice. YUM YUM YUM.

i roast blackened catfish too.

ETA: my favorite roast fish recipe:

olive oil at the bottom
then the fish
salt and pepper
a bit of mayo and lemon juice
bread crumbs + herbs and/or cheese

if you're using the cheese some tomatoes would be good too

and BACON! bacon on roasting fish is great, since it keeps the fish moist while the fish is baking -- kinda like what it does for lean meatloaves.

oh -- as for wrapping. i don't wrap it in foil. sometimes i wrap fish in banana leaves. but yeah, that's more like steaming it.

banana leaves and fish = awesome grilling partners though.

Why is called roasted? Stef, I would love to come to your house someday.

The latest salmon filet recipe we have really enjoyed

salmon in glass dish
covered with olive oil
sprinkled little kosher salt, dill
garlic powder or crushed garlic
chopped onions covering the fish
and then lemon juice generously over it all

bake at 350 oven. I dislike dry fish, Lindsay, and the onions keep it very moist. This is allergy safe for us and easy.
