This planning thing is getting me a little nutty, so if I start to sound desperate just talk me through it! 
Has anyone used RC History for high school? I am wondering how detailed it is.
Also, does anyone know when the next two volumes will be out. If it was mentioned on the website I missed it.

I've used it in conjunction with other things for high school. A lot depends on how much specific support you want. There is still a lot of planning to do if you use it exclusively.
In a nutshell - and I'll try to be brief - this is how I used it:
We had some sort of references around which I knew had the main people and events of the period in there. I expected my children to make a timeline with the key people on the timeline and a short notebook page on them (RC history had a list of names and dates at the beginning of each unit) - ie look them up. I tried to assign some sequential reading - combination primary sources, biographies and history (text or other - something that put things together making some connections between people and events). At times I chose from a few paper topics in RC history, sometimes I simply wanted them to write a summary of the chain of events, cause-effects, etc. and other times I pulled in Kolbe history assignments. I found that the two dovetailed rather nicely. By itself, RC history just seemed like a loose list of ideas especially when it came to high school and not quite a deep enough history - more of a survey of church history but I think they did a better job of connecting church history to secular history whereas Kolbe had more primary sources (sometimes an overwhelming amount) and secular history in depth - more like a magnifying glass on a specific segment (time and place) but with no direct association with other things going on at the same time like the birth of Christ. Blending the two worked for me.
I have been meaning to check and see if their American History is ready yet - but not too concerned here as I'll simply use other things if needed. Vol I and Vol II are done. I suspect the others will be done piecemeal as we go through the year. Vol II was done that way last year (another reason I simply couldn't just use it by itself as I had no real idea if the units would be ready or not - they were).
Feel free to ask me any questions. I have Vol I and Vol II here. My children who like lots of plans and structure found that they needed me to be much more specific than the way RC history has it. Oh and I used their map work - something missing in Kolbe plans for high school and something that really helps my visual learners.
The thing I use most and have found most helpful is the timeline - and the cards which have pictures to put on the timeline (it includes all the popes, etc.). We simply add cards for anything we add from other reading or Kolbe. A lot of the same books are read between Kolbe and RC History, just RC history sometimes has them reading excerpts rather than complete works.

I read in their catalog that Vols. 1 & 2 are available now with Vol. 3 coming out in 2010 and Vol. 4 coming out in 2011.

Sonya is on several e-mail lists that I'm on (FCL I think, and TheHistoryPlace for sure, probably others) and she is pretty accessible. Just shoot her an e-mail with some questions and she will get back to you with an answer.
Like Janet, I've used Vol. 1 and 2 (most of 2, anyway), and wound up supplementing because, well, I just can't leave anything that's already done for me alone...I'm a born tinkerer. (And that's...OK).
I think I mentioned this or alluded to it in another post that I am taking the RC History Recommendations for American History this year (the Artner's Guide, plus the supplement Beyond the Pilgrims) and building my own multi-level study. The multi-level input comes from several other sources that I have listed on my blog:
Planning Time Begins
In the version of Beyond the Pilgrims that I have, she aligns the units from Our Pioneers and Patriots and Christ and the Americas within the unit framework in the Artner's guide. I now see on the St. George website that America: The Last Best Hope, by William Bennett, is recommended as a high school resource. I don't know if that change has been made in BTP or not.

Thanks ladies. I want something more structured, although loose would be more in line with what dd wants.
I was planning on getting the Artner's guide so I will look at those other resources to go with it.

At the high school level, RC History needs a lot more primary source documents. I had to supplement quite a bit.
