Have you looked at Mater Amabilis Level 4? I've used this as at least an outline for my last two 8th graders, though with my last one it was more of a jumping-off place. Here actually is a course outline from a blog I (very sporadically) kept for him that year.

We have also used some CHC middle-school stuff -- I liked their "Virtue Tree" program, for example, which we did in 7th grade using the old middle school plans, and also their history plans which had the student doing a small research paper each week. What we used for 7th grade were actually meant for 8th, I think -- I tweaked those plans all over the place.

Overall, though, I really like MA the best, especially as a preparation for high-school work.

My dd just finished up her Gr. 8 year. I will share what we used this past year but I will put a disclaimer on this that we are not Catholic (this disclaimer is mostly for my history selection.)

We started out the year using Math-U-See but my dd got stuck early on in the book so I switched her to Jacobs Elementary Algebra and it has been smooth sailing ever since.

For writing, we used Writing With Skill by Susan Wise Bauer. This was the first volume in this series. My dd finished the book in Feb. The second volume isn't going to be released until Aug. so we just used what she learned in WWS and applied it to writing essays based on what we learning for History. For grammar I used an old school text entitled Mother Tongue by Kitteridge. I didn't do copywork, dictation nor narration with her but I will with my ds when he gets to Gr.8 next year.

We used Tapestry of Grace loosely for history. I mostly used the teacher's notes (they were a big help.) I made up my own book list. I was given TOG so I felt free to use it in this way.

Apologia Physical Science was our first foray into textbooks. We balanced it by having her read Bill Bryson's A Short History of Nearly Everything.

She also did Art of Argument for logic.

We've enjoyed Noeo Science. Their Chemistry and their Physics both go to 7-8th grade.
