Just discovered pumpkin oatmeal! I've been putting half cup and 1 cup portions of pumpkin in the freezer when a large can is just too much for a recipe (like baked pumpkin French toast). I looked up recipes for pumpkin oatmeal this morning (found this recipe) and tweaked it using our normal old fashioned oats recipe and adding just the pumpkin and spices. Nice recipe for a Fall morning or All Hallows Eve!
I've also been chopping & freezing bits of apple or banana (especially when they're less likely to be eaten fresh) and using them whenever I make a batch of oatmeal! Yummm!
Do you have any inexpensive Fall recipes your family enjoys? Any favorite add-ins for oatmeal?

Thanks for the recipe Melinda ~ I know what we'll be having for breakfast tomorrow!
Useful tip ~ we keep oatmeal on the kitchen counter (in a gallon-size "recycled" pickle jar), with a chart (see below) for cooking directions affixed with clear contact paper to the back. Surprisingly, having the oatmeal more accessible like this has increased our oatmeal consumption, which is great since it's such a heart healthy food for dh and the entire family. Here's a fun page .

We love pumpkin oatmeal or apple-cinnamon oatmeal in the fall. We also do the same flavors as oatmeal bars for a portable breakfast.
Other fall favorites:
:: gingerbread
:: baked apple slices (served with cheese)
:: grilled cheese or quesadillas
:: apples with dip (peanut butter, cinnamon and cream cheese)

Oh oatmeal bars.. another fallish flavor is cranberry walnut.. the one we make uses applesauce in the mix.. we substitute whole berry cranberry sauce and mix in dried cranberries and chopped walnuts.
