I am wondering how big a difference there usually is between editions of various text books? For instance, I have the opportunity to buy an Apologia text for a good price but it is an older edition. I also have some Saxon math texts that are older editions and no one seems to want them.

What are your opinions? How often does a new edition have improvements vs just being put out to make more money?

A lot has to do with the availability of supporting materials - answer keys, plans, additional workbooks, and such.

Saxon newer editions have added in some nice features, and they are workbook - but as far as content, I don't personally think it is enough difference to warrant a new purchase unless you are using a particular lesson plan or don't have the solutions manual or Some other thing to go with it - or if you just have a need to minimize copying and want a workbook format.

I'm not so familiar with Apologia - a few years back, I did sell mine and some people taking classes wanted a certain edition. Other folks really didn't care.

One thing that may be fixed in newer editions are errors in the answer key or text (and usually there are plenty of these) but if it is significantly changed, there will be a whole new batch of errors.

If you could compare, that is what I would do. A lot of times, it really isn't a really critical difference. I'd also make sure all the pieces are with it as some of this may no longer be available - say if you want to buy a DVD or another answer key, they will cease supplying an edition at some point.
