My little boys (4-7) love The Squire and the Scroll and The Errant Knight. Both stories have wonderful moral messages. I just realized you have older students, too, so I would suggest King Arthur and the Knights of the Round Table or Men of Iron by Howard Pyle. Not sure exactly what level you're looking for, so HTH.

A Medieval Feast
I haven't seen this one, but someone recommended it:
The Making of a Knight
Tomie de Paola's The Knight and the Dragon
You Wouldn't Want to be a Medieval Knight

We love the Good Times Travel Agency books. One of our very favorites is their middle ages book:
Adventures in the Middle Ages
Have fun!!

Thought of another one your Mark is sure to enjoy, Diary of a Castle Knight - Tobias Burgess by Richard Platt.

For a great early reader you might want to try Minstrel in the Tower and The Sword in the Tree (early chapter books).
