My big gift for Christmas is a 7 1/4 quart Dutch Oven by Le Creuset.

I've been wanting one for years.

This will require rethinking how I cook, but I'm looking forward to the challenge

If you have one and use it regularly, please share how you use it. I'm looking especially for more "paleo" type recipes, except we use rice and potatoes. (I don't follow paleo, but it's easier to make that classification because we avoid wheat and milk for our cooking).

Beef stew, roast chicken--pretty much anything you might cook in a slow cooker.

I don't have that many pots, so mine is used daily in steaming vegetables, soup recipes, etc... I also liked making oatmeal in it when we were eating oatmeal regularly.

I also use it for everything! Apple sauce, gulasch, soup, stew, roast "beast", mac and cheese...
I just got a smaller pot ,5.5 qt, this Christmas in addition to the large one, 7 qt, I got 2 years ago.

I also have a slow cooker, that I use very regularly. I make yogurt and my bone broths in the slow cooker. I also make pork, beef and lamb in the slow cooker, depending on time and circumstance.

I really hesitated for the longest time about getting a le creuset dutch oven because I had a slow cooker already, but I have to say I need and use both almost daily.

That's just it, I haven't used my crock pot for very much, but I do cook and simmer a lot of things on my stove, so all these other ideas are fabulous.

I will breaking it in making my meat sauce for the lasagne for our family Epiphany party. I will have a houseful!

I do have a 5-qt. Dutch oven -- not a Le Creuset -- that I use constantly, pretty much for anything requiring a pot on the stovetop: soups, stews, risottos, chili, meat sauces . . . It was my mother's go-to pot for years (she gave it to me when she moved and bought herself a new one, which I think is a Le Creuset!), so it conjures many growing-up memories every time I use it.

I tend to use the crockpot more for things like beans and bone broths, that are going to require all-day cooking or simmering, or for cooking roast cuts (beef, pork loin) when I need to throw something in in the morning and forget about it until I get home in the evening.

I have often used both items on the same day, so it's not like they replicate each other in function. And I would really love a nicer, larger Dutch oven than the one I have . . . maybe next Christmas! Sounds perfect for making sauce for a large group.

Meanwhile, y'all, I am in LOVE with my kitchen island.. Our kitchen floor is all torn up right now, waiting to be sanded and refinished, and I had resigned myself to waiting a LONG time for anything like it. But I had been sighing after this particular one, which my husband said made his shopping process a lot easier. Now I can't believe we ever lived without it.

It's a great size -- big enough, but not too big. I do have a big kitchen, very open (it used to be a small kitchen + butler's pantry, but some previous owner opened it up into one room), and I hesitated to clutter up the open space with a large piece of furniture, but it's amazing how much easier it is to work with another countertop right in the middle.
