Next week.. Superbowl

So, what's on the menu?

For some reason, the Superbowl just screams processed food... chips, dips, chicken wings... the snacks are half the fun

But in trying to come up with healthier alternatives, I am thinking homemade chili, veggie tray, possibly homemade cracker jacks or popcorn balls.

Ds is already lobbying for a can of Pringles - he's wanted to try them ever since he saw Steve Spangler blow up a can to open it.

Of course, if the commercials are like last year, I don't know how much of the game we'll get to watch. I'm still not over the GoDaddy ad that played right up front.

Well.. tortilla chips are probably one of the better "chips".. and a mexican layer dip is actually good for you refriend beans, cheese, fresh veggie toppings.. meat if you want, make fresh guacamole if you want that.. sour cream. All in all not bad really.

The homemade chili will be more fun with various toppings.. shredded cheese (maybe more than one type?) different types of crackers.. oyster crackers are fun, or if you don't want purchased crackers what about homemade croutons? and onion (different types?) and sour cream, diced avacado.. stuff like that.

You can do the spicy "buffalo" seasoning on any sort of chicken strips to get a chicken wings type of taste.

stick some olives on your veggie plate, everyone loves those Maybe find some other things that are unusual. Have you ever tried Jicama? it's crisp and mild tasting.. like a very mild unsweet apple (or a not hot at all radish)

I just posted in the weekly dinner post that I am making these....roasted cauliflower bites with vegan nacho cheese
I’m not sure what else....maybe popcorn.....we might do some kind of bean dip. I’m not even sure if we can WATCH the Superbowl, which is a big deal in this house....my dh cancelled cable, and we figured out after the fact that we live a bit far away for the antennae to work.

5 guys in our house - lots of requests for Superbowl snacks.

Still thinking about it:

- homemade wings - buy a stack of wings, marinate in Frank's hot sauce and either put in oven or crockpot

- Trader Joe's jalapeno pub cheese with ancient grain crackers

- my favorite - antipasti - olives, artichokes, sweet roasted peppers marinated,

- carrots and cucumber with humus

- tortilla chips with black bean dip

- meatballs(in cranberry sauce if I can still find some)

I love chili - but have to find a good recipe without tomatoes (we have tomato allergy)

How about white chili?

White Chili
1 lb dried small white beans (or 4 16 oz cans of beans, we use great northern beans)
3 tbs olive oil
1 large onion, minced
3 cloves garlic, minced
2 4 oz cans chipped green chilies
1 tbs ground cumin
1 tbs ground cinnamon
1 tbs oregeno
pinch cayenne pepper
8 to 10 cups chicken broth
4 cups cooked, chopped turkey or chicken
salt and pepper
3/4 lb shredded monterey jack cheese

If using dried beans, soak the night before. Heat oil in a large pan and saute onions until soft. Stir in garlic, chilies, cumin, oregeno, cinnamon, and pepper. Saute three more minutes. Add beans and chicken broth. Bring to a boil, reduce heat and simmer until beans are tender (2 to 3 hrs). Add turkey, salt and pepper. Just before serving stir in cheese. Top with salsa and sour cream if desired.

When we made it in the crockpot, we used canned beans and just dumped everything in that morning and let it cook until after church.

This is from a friend, we like it very much.
