I need main dish egg recipes! We are getting an average of about 15-18 eggs a day from our chickens, and the kids have not yet begun to sell them. I'm getting bored with the usual crustless cheese quiche (12 eggs) and puff pancake (15 eggs -- if some are small) that my family likes.

Any other suggestions for big egg meals?

We love ricotta cheese pie. The crust and the filling use eggs. I usually make a large filling -- doubling the inside recipe. I use a springform pan.

Here's a recipe similar to one I use:
Ricotta Cheese Pie
We don't like raisins in the pie.

At Easter we also make Easter bread with a lot of eggs. I don't use the colored eggs in the bread. I just braid the bread. But if you really want to use up your eggs you could add the eggs on top:

We've made this recipe twice recently:
Tuscan Pici Pasta

I have all the little girls help. It's a rough hewn homemade pasta with a lot of eggs.

Have you done any egg bakes? I have a good one my MIL has that is just delicious, good for breakfast and dinner!

We make our own version of eggs Benedict.

We use softish boiled eggs instead of poached. Much easier. And we use ham instead of Canadian Bacon. Much cheaper.

So if you like Hollandaise sauce then this is a dish that uses close to 2 dozen eggs for our family!! Wow!

Toast English muffins, boil eggs, heat ham on cookie sheet in oven, make Hollandaise sauce and assemble. A huge hit in our house.

We are also getting about a dozen eggs a day.

I put crab in quiche and that's an idea for different quiche.Once I made scrambled egg pizza. You use a layer of eggs that are whipped up like an egg casserole on the bottom on the pan instead of pizza crust then add sauce and cheese like normal pizza. It was okay. Another idea is homemade custard. French toast uses a ton of eggs.hmmmm, let's see. . .breakfast burritoes is another idea. My teen loves to put spicy "red hot" sauce on them after they are scrambled. Gosh, now I'm hungry after thinking about all this.

Egg Foo Young comes to mind. Take any of your leftover veggies and use them.   

Custard is awesome as a dessert, or even for breakfast.

French toast uses about an egg per slice of bread.   Bread pudding is another idea.   

What a great problem to have!

We make a dish my mother's friend gave us . It is a cassarole of cooked seasoned rice on the bottom , top with raw spinish , crack over the top of spinich as many eggs as you can fit , try not to break them , top with a cheese sauce & bake @350 until eggs are done .
then my friend taught us this quick and easy dish we call it dunn eggs because they are the dnn family
in a skillet melt butter , make a circle type pancake in skillet out of left over cooked rice about 1/2in-1in thick . season rice with Spike or soysauce etc. let the rise cook until the bottom is crunchy . Then break two eggs on top . You can make two little holes in the rise to hold the egg in place . season your eggs . place just a bit of water in pan cover skillet with lid and cook until eggs are your desired stage . We love runny eggs it makes the rice taste oh so yummy ! so far this recipe is loved by all who have tried it .

Rox, your post reminded me of a dish my parents enjoyed as children.

Take freshly cooked rice, steaming hot, and make a little hill on your plate. Poke a hole in the middle, break an egg in, season with salt, then stir-stir-stir until egg is incorporated. They used to make this with rice from their fields and eggs from their chickens.

Guess there were no salmonella concerns back then.

Our kids eat something very similar to Rox and Stef's dish. It's a lazy way to make dunn eggs and is probably the most common breakfast in our house. While waiting for the pan to heat, mix one cup of cooked with rice with 1 egg. Add soy sauce to taste (1-2 t to start). They go by color, you can always sprinkle it on top after it's cooked. Pour rice egg mixture onto the pan and shape into a pancake. Flip when crispy and cook through. When we had eggs last year we did a lot of fried rice and impossible pie too. I also froze them.

Our favorite egg dish- I change it up for breakfast or dinner, but we all love it no matter what's in it. You might need to double this recipe for your family.

Spray a 9x13 pan. Crack a dozen eggs into it. Whisk around until blended. Add 1/2 lb shredded cheddar and 1/2 lb shredded colby/jack cheese (yikes! I never said this was low-fat ) . Mix it up. Now add whatever you want and have on hand. We like diced green chiles, mushrooms, bacon, cooked sausage, salsa... really, just put in whatever you have and you think your kids will like. I only put mushrooms in half of the pan, because my dh and I love them but the kids won't eat them. Sometimes I don't put anything in it- just eggs and cheese. It's a very flexible recipe.

Mix it all up and bake for 30 minutes at 325 (in a hot oven) or 350 (if your oven is like mine and takes f.o.r.e.v.e.r)

Yum!
