Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

We never really plan anything different for breakfast or lunch, although today we'll have leftover Kielbasa for lunch.

Tonight is the postponed crockpot roast. It's in, and all's well with the world now.

Meatloaf and green beans. I finally figured out how to fix green beans so that dh and ds both love them: I steam them until they are about halfway done, and then saute them the rest of the way in a combination of butter and sesame oil, with soy sauce and garlic powder. The pre-steaming makes it quick, and everything else makes it tasty!

Considering my options..

I think I'll make a nicer lunch and do sandwiches at dinner.. difficult day for making dinner anyway and dh won't be home for dinner.

Same thing as last week, working through the freezer stash: beef chili over roasted potatoes, topped with cheese and sour cream. We'll probably have corn on the side.

And I'm hoping to bake up some granola bars this afternoon, so that will make a nice dessert.

Poached salmon, rice, and marinated artichokes. I am not thrilled with it, but we are vegetarians that are expanding our diet because we need to and Thursday night seems to have turned into salmon night. Hopefully, this week it will go over better than it did last week

Spaghetti w/ meatballs, salad w/ "fresh" cucumbers , and brownies topped with cool whip cause Garrett made his Confirmation tonight. An all around great celebration!

There was a reception in the church hall afterwards and we were almost too stuffed to eat. Good thing...the food went super fast.

Woo-hoo, Cay! Congratulations to Garrett! What wonderful news...thanks for sharing.

(Wish you could share the brownies, too, but... )
