Hi Ladies, I would like to know if any of you have used the sugar form of jaggery ? I was thinking to make the switch as it is much cheaper for us here to purchase jaggery. We purchased just a small cone to start with as we were not sure how taste would go over.
Anyway I have some questions for those of you who do use it . How on earth do you get it into granule form , if at all ? I thought it would be soft enough to grate but it is kind of hard for that , almost rock crystal like . Also when using for baking does one just use the same amount as for say brown sugar ?
I would like to make the switch as it does appear to be a healthier form . Thanks for any info , Roxie

i'm not sure what "sugar form of jaggery" is. we use jaggery occasionally (it is similar to the Filipino panutsa and the Mexican panela). So yummy! But my kids are not used to it so I can't use it for everything. I've only ever tried using it in Mexican/Indian/Filipino dishes/desserts and not in, say, American chocolate chip cookies. Usually in those preparations some liquid is involved so I just melt it in the liquid, e.g., hot coconut milk. but yes, if you needed it in small amounts you'll have to grate it. i just use my grater for that, i don't know if Indians have a special tool, but i can ask around for you if you like.

It's not really a crystal, more like a cake... Rox, is it possible it's old stock that's dried up and that's why it's more difficult to grate? You can try looking for Filipino panutsa or Mexican panela instead.

Or Sucanat....

Stef we have the panela from my friends store but the kids did not like the taste. They like the taste of the jaggery though . go figure , silly kids . so I bought the jaggery from the east indian food store. It didn't dawn on me it'd be so hard. I think you are right it must be old it seems almos like glass ! if you could ask that would be great . perhaps I could try the panela again and mix it in with brown sugar to start , sort of wean the kids into developing a taste for it there has to be some way to do this . The panela is softer , maybe fressher coming from MX instead of india. we've the large philipino community here but not many ethnic stores ,most people just shop superstore I've never seen the sugar at the philipino stores .

I softened this by steaming in a pot of water wrapped it in cloth ! it worked !
