Aside from salads and sandwiches, what else can I make with them?

Tzatziki (sp?) is a delicious yogurt sauce/salad used in middle eastern meals. I use it alongside grilled fish or chicken. Line a wire strainer with cheesecloth- or paper towels pour plain yogurt in and allow to drain for a few hours (you should probably do this in the fridge- but i never do) When it is very thick add grated cucmber, lots of garlic and if desired chives and dill. It will need salt. Excellent alongside hummus and pita. I usually grill chicken with lemon and cumin to setrve with this.
Veggie "salsa"
dice up cucumbers, colored peppers, red onion, celery and tomaotes. Add minced garlic. Season with salt and some fresh chili's if so inclined.(or go in another direction and add basil and tiny cubes of fresh mozzarella) Allow to sit a while, until it gets juicy. Serve with chips or with any meat -or even rice and beans. I've also been known to toss the leftovers into jarred spaghetti sauce and they actually got eaten.
