My in-laws are stopping here tonight on their migratory path home to New York. They are going to take us out to dinner, probably Bonefish. I am making a Key Lime Pie for dessert.

Here's the recipe

Graham Cracker Crust....

I crush up a bunch of graham crackers, throw in 3 Tbsp sugar and melt a stick of butter. Mix it all up and press into pie plate. Bake at 375 for 8 min.

Key Lime (actually just Lime filling)

I do sometimes grab the little key limes, but more often I just use regular limes.

1 can (14 ounces) sweetened condensed milk
1/2 cup plus 2 Tbsp fresh lime juice.....I may use more
2 large eggs
2 Tbsp grated lime zest.....I sometimes skip this
Dash of salt

Topping
8 ounces sour cream
1/4 cup sugar
1/8 tsp salt

Place all the filling ingredients into mixing bowl, whisk until they are completely mixed. Pour into COOLED pie shell. (You all probably already know it must be a COOLED pie shell. One of the first times I made this I skipped that part.......lime soup was served for dessert)

Bake the pie on the center oven rack until it begins to set, about 10 minutes. Remove pie from oven and turn up the heat to 425.

Whisk the topping ingredients, then spread topping over the pie. Bake 5 minutes more. Topping will be loose when you remove the pie but it will set as it cools. Cool on a rack, then chill for 6 hours.......if you can wait that long

If it doesn't rain we're supposed to have the 1st Tball game tonight so we need something to eat at the ballpark.

We're having sundried tomato/basil wraps filled with turkey, guacamole, bacon, salsa, cheese and baby spinach with chips and grapes.

(But they're calling for rain so I fear the game will be rained out just like Saturday's game--poor guy.)

Dh wanted to go to Fox Pizza last night so we had to skip my planned Wednesday "Great Depression Cooking w/ Clara".

We love getting the *Big Daddy* because that one pizza is so reasonably prized and feeds our whole family of 7!

Well, my 21 yr old ds could eat half the pizza by himself but he practices gluttony control (6 slices) when all 7 of us are eating together...has to. Then he goes home and eats a bowl of cereal and a sandwich.

Is it really gluttony? I've seen the kind of energy that a 21 year old man can burn. Their bodies really do need that amount of fuel! The hard part is when they hit 30 and their metabolism slows waaaaay down, or so my not-so-little brother is finding out now!
