Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Tonight I am making my favorite pasta from California Pizza Kitchen, Chicken-Tequila Pasta. I hope it turns out!! I have never made it before.   We'll have a yummy salad to go along with it, spring mix, pecans and gorgonzola.

I think we're doing Spanish chicken with green olives in the crock pot tonight. (Dance class) You cook it with brown insta-rice. Very tasty. I still need a veggie (boo hoo, green olives don't count).

BBQ chicken in the crock pot with rice and a salad. Maybe I can also get some bread in the over.

For lunch, it's bernios for the kids and leftovers for me.

Breakfast was oatmeal or cold cereal.

PW lasagna.

A question though:
I made this today for the first time, but I notice the cooking instructions say cook for 20-30 minutes at 350. Most lasagnas I've made need to cook for much longer. Has anyone made this and are those cooking times accurate? (I'm nervous because I also made one another family as a "thank you" and told her what the cooking instructions said--but also told her it might need longer to cook.)

Thanks!

Melissa, I've made PW's lasagna many many times and I always bake it for 30 min. - no problems! I've given this to quite a few families too, and always get raving compliments on it - it really is a great lasagna recipe!

It is really hard to make chicken pasta if you forget to take the chicken out of the freezer.

I just finished making Gyros. Also a new recipe, hope they turn out.
