You know the baking trays that have individual corn cob moulds _ I guess you use them for corn bread! Dh bought me a cast iron one, and I was going to use my usual cornbread recipe, but thought there has to be a name for these things and then I could google a recipe that might work better. Anyone know what I mean?

I think that is generally what it would be called - or cast iron baking mold might work as a search phrase, too. The link I posted above does have a recipe for maple pecan cornbread - sounds yummy. You'll have to let us know what you find and how they turn out. It's a really cute mold - I love it.

You are in luck. I just happened to be browsing a Williams Sonoma Bread cookbook for something completely different and saw a recipe for "Corn Sticks" and thought they looked good but lamented not having the pans!

I just googled, and there are lots of recipes for "corn sticks" to choose from!

Carole, I usually use the 1950s cornbread recipe from Laine's Letters. I can find cornmeal okay in the tesco ethinic aisles, or in ethnic shops. Sainsbury's used to sell it - labelled medium polenta. I don't know which store you shop in most often, and I do know that when we visit Wales (where dh's family comes from) it seems sweetly behind England in some ways - ie that's where I buy my darning mushrooms from!

Did you make any? How did they turn out. The molds looked so cute in the pictures I saw. I just thought it was so ironic that you would ask the day after I saw the recipe!

I do love cornbread. I generally like the Southern kind better (lots of cornmeal, very dry), and my dh (from the midwest) likes the Northern kind better (lots of sugar, mixture of cornmeal and flour, very moist). So, I alternate. I would guess there are lots of different ways to make the corn sticks, too.

Thanks, Lucy. I do shop at Tesco, but have not found cornmeal as of yet. We do struggle at times with finding some of our favorites (not just American either). But I have discovered some very wonderful dishes and new methods of cooking over here!

And Lindsey, my children love the cornbread with sugar in it. I am not certain why. This is the way my mum makes it (and she is from Louisana). And their favorite mix is Jiffy cornbread mix.
