Got this recipe from a friend (it is her note at the bottom) and thought others might need something else to do with pumpkin. I haven't tried it yet, but I will be soon :)

Choctaw Indian Cake

2 cups flour
2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
1 tablespoon cocoa
1 1/2 cups pureed pumpkin
1/2 cup oil
4 eggs, beaten
1 teaspoon vanilla

1. Preheat oven to 350 degrees.
2. In a large mixing bowl, combine flour, sugar, salt, baking soda, cinnamon, and cocoa.
3. Add pumpkin, oil, eggs, and vanilla. Blend well.
4. Pour into greased and floured pan: Bundt pan or ring molds - bake 40-50 minutes; 9" x 13" pan - bake for 30-35 mintues, or until toothpick comes out clean.
5. Frost with creamy chocolate frosting, if you like. (We actually like this cake PLAIN. It's very moist. Sometimes DH will throw a dollop of cream cheese frosting on his cake.)
