ours is easy and light -- half olive oil/half balsamic vinegar. What types of dressing do you like?

My family likes it when I make this simple dressing (idea from How to Cook without a Book by Pam Anderson). Pour olive oil over salad, sprinkle with salt and pepper, and toss. Leaves should be glossy. Sprinkle with vinegar of choice, usually balsamic, or sometimes Vincotto for a real treat. Toss, taste and adjust.

I just do half and half olive oil and white wine vinegar, with a dash of lemon juice if I have any to hand.

We use and LOVE this recipe: use the good seasonings Italian packet and bottle. Use flax oil for the olive oil, balsamic vinegar for the vinegar and follow the rest of the directions on the bottle for the water amount.

We use about 3/4 extra virgin olive oil to 1/4 balsamic vinegar, shaken up together (in a jam jar -- classy!) with some coarse grain mustard to emulsify it.

The children love it and as a result regard salad as a treat! Honestly!

Another variation is to substitute walnut oil, or Dijon mustard, or add some pesto, or some garlic.

Pine nuts or walnuts also jazz up a salad dressing.
