Can anyone accept this cooking challenge? :) I'm trying to use what I have in my pantry before buying again (we are in the process of moving soon). I have a whle bunch of kidney beans, some barley, chicken, rice, some frozen veggies, tortillas, a few cans of tomato items and spaghetti sauce plus some other odd end things. What could I make with all that?

I would cook the barley, add some chicken stock and veggies and then throw in some kidney beans (precooked) for protein.

I would use the kidney beans with some spices on top of rice, or baked with the tomato soup or tomatoes in the oven then serve it over rice. (or just refry the kidney beans and serve them with rice in the tortillas with the rest of the beans/rice as a side dish!

Just follow any recipe for chicken and rice soup and substitute for the barley. Evelyn Vitz's recipe (which someone typed in here on 4Real for me 2 years ago I think) has barley in it.

Otherwise, if you have chicken stock, cook the barley in chicken stock (like rice) and serve with the chicken and frozen veggies. If you still have tomato sauce leftover, make a simple version of chicken cacciatore and serve with barley and the veggies.
