I know, I know, a lot of the US is still dealing with snow...but here in AZ we are supposed to have 95 degree days for the next three days . I don't deal with the heat well anyway, but the sudden onset of high temps always wipes me out!

Can anyone suggest simple, light, easy meals? Or non-heavy crockpot meals? I don't want to turn on the oven if I can help it....

We like salad in a pita. Cut pita in half and fill cavity with veggies and vinaigrette or sub sandwich dressing. This is great because it is so versatile...with meat, without, and whatever salad you conjure up is usually pretty tasty in it. Hummus inside is good too.

What mainly gets me through the summer is my freezer. June starts hurricane season so I don't like having a lot in there which means all the double and triple batches of things I made from November to February start getting used up as soon as the temps hit the 90s because they can just be warmed in the micro. Pretty much after these meals are used up is when we do the grilling to get the meat out of the freezer then it is salad for the rest of summer.

The only time I use the oven is when my son gets the urge to bake and making bread in the bread machine isn't enough for him.

Here are some of my favorites, many of them I got here......

Greek chicken, I found a good Greek marinade at a local store, grill the chicken, I use my George Foreman. Then serve in flat pitas from Costco, I add tzitiki (I come back to edit the spelling) sauce, lettuce, grape tomatoes, kalamata olives and feta cheese.

Last week while we were in San Diego I discovered and fell in love with Flat Iron cut of steak. The butcher there added some dry seasoning to it, it was YUM-O! I used it to make the Elizabeth's steak salad. Boil new potatoes, quarter them, put them in the bottom of the bowl. You can toss them in marinade if you like, they are really yummy that way , then add spring mix, colored peppers, frozen peas (just defrost them under cold running water)...whatever veggies you like. We usually use flank steak marinaded in your favorite marinade, but I am not on the hunt for those flat iron cuts. I'm thinking they are more popular on the west coast.

Taco salad....ground beef or turkey, frozen corn, black beans, cheese, lettuce.....all your favorite taco toppings....whip up some of Angie's yummy salsa and serve over chips.

Chicken tacos in the crockpot. IQF chicken with a package of taco seasoning in the crockpot for about 6-5 hours. I thank Irene for that one!
