I've known for a long time that according to my blood type (Eat Right for Your Type) I should be eating a lot less meat and a bit of soy. I do cook with tofu once in a while; I mostly make Veggie Lasagna with it in place of the cheeses. I was thinking of making a salad with some fake feta, for which I found a recipe on the internet, but never did it. What else should I be doing with it? My dh should be eating meat, so I'd like to eventually replace whatever he and the dc are eating with my own plate full of salad and meatless whatever they're having (does that make sense?) And does it melt, like if I made a grilled cheese sandwich only with tofu and sliced veggies?

Hi Gwen, we love tofu!

For tofu used to replace meat in things like sandwiches or pasta dishes, I like marinating the tofu slices first, then grilling or pan-frying them. Just gives them that extra oomph of flavor that one might miss when switching from meat.

I do have a couple of cookbooks to recommend:

The first is by Eng Tie Ang -- Delightful Tofu Cooking -- I thought this would be mostly Chinese dishes, but it's not. There's a lot that's just vegan/vegetarian, but there's a lot more where the tofu is mixed into another dish, e.g., Lemon Soup, Seafood Salad, where the tofu is used as an additional protein source, so you mix it in with meats or seafood, OR you can cook two versions of the dish -- one with only tofu and one with only meat for your family; it saves time in that you're not making a totally different dish for yourself.

The second is This Can't Be Tofu by Deborah Madison. It's got recipes like sandwiches, shakes, pasta, sausages, etc. all using tofu.

I've got one other tofu cookbook that I have cooked more from and do love, but I can't find it right now and I can't remember the title. I'll update this post when I do. Meanwhile, hth!

No, tofu doesn't melt; however, there are soy-based cheeses that are mozzarella-type and that will melt, kinda.

We brush whole wheat pitas with olive oil, then cover them with chopped spinach, roasted garlic , and crumbles tofu for a fets-type pizza...I like to add sun-dried tomatoes too...the kids have the same only with turkey pepperoni and skim mozzarella. It's one of my dh's favorite foods.
