In 1849 Anthony gathered together five priests who formed the basis of the Missionary Sons of the Immaculate Heart of Mary (popularly known as Claretians). At the suggestion of the Queen of Spain, Isabella II, Anthony was named archbishop of Santiago, Cuba (1850).

If I remember my history correctly, in 1850 Key West and most of Florida was under the Archdiocese of Havana as the Archdiocese of Saint Augustine wasn't formed until 1870 and we are only just celebrating the Archdiocese of Miami's 50th Jubilee this year. All this means that Saint Anthony Claret would have been Key West's Archbishop at that time, right? We're definitely having some Cuban food to celebrate tomorrow!

Breakfast tomorrow will be in town before choir, so Cafe con Leche and Batidos with Pastelitos. (I am addicted to the coconut ones. So good.)

A recipe we've enjoyed that'll be good for a Friday meal is Cuban Mango Salad.
1 small sweet onion, chopped
2 mangoes, peeled and chopped
1 avocado, (1 if Haas, 1/2 or less if FL Gator-style avocado) peeled and chopped
1 16-ounce can black beans, drained and rinsed
2 cups cooked, chilled brown rice
1/2 cup chopped cilantro or parsley
1/4 cup vinegar (or substitute mojo)
1 teaspoon ground cumin
Bottled hot pepper sauce to taste

Combine all ingredients and chill.
Add seafood on top before serving if desired, shrimp or lobster are fab.

Or I may just pick up some seafood Paella on the way home.    

Most of the recipes I linked to here are from Three Guys From Miami, another good source is Goya, I suppose, though they list their recipes as Caribbean rather than strictly Cuban.

One year we made crosses out of popsicle sticks and glued sugar cubes on them for decoration (to remind us of Cuba). We put a purple ribbon on them and now we hang them on the Christmas tree.

Good excuse to stir up a pot of black beans and rice, cook some fish, with a side of yummy plantains, and mojitos for dessert (for those of us over 21)!LOL!
