For RCIA homework this week, I am supposed to research a saint and report on him/her. Since we don't have a lot of print resources on saints at home (I have Cooking With the Saints, but that's it) does anyone know of any web sites that might help me get started?

Catholic Pages.com

You can also find some information on these liturgical year resources:
Domestic Church - saints profiles
Catholic Culture - it's in the Liturgical year section. There isn't a good way to find the saints by listing - you have to search the name or know the feast day, but there are biographies there.
