I hope you can help me with some fun or at least beneficial history projects to use at our co-op next year. We will be covering from WWI to the present.

Our line up will be :

Week 1: introduce the time period
Week 2: do a project
Week 3: have a guest speaker from the various wars

What I really need are the project ideas that they can do in class. I've done a google search but the projects seem... so boring. There are tons of fill in the blanks and/or use the computer ideas, unfortunately we will not have access to a computer lab at co-op. There are 22 students in the class.

We studied WW1 last year and the project ideas I offered my children were:
Cooking
Make Anzac Biscuits
(We're Australian)

Activity
Create a Soldiers or Nurses Uniform.
or dig a Trench.

A bit hard to dig a trench in class I know but perhaps build a model of trench warfare?

I'll think on this more, but what age are your co-op children?

What about creating the front page of a newspaper and writing articles for it? Even including adverts for products from the era?

I also like the uniform ideas...or maybe something with the music associated with each war/patriotic stuff?

This website below has some pictures of some of their exhibits...projects that might be adapted for your co-op include making a Princess Mary box or painting the "steel" helmets (you could buy some inexpensive plastic army helmets from orientaltrading.com or even a local toy store, perhaps?)
