We're starting our Christmas baking/treat-making tomorrow (to coincide with the O Antiphons starting ...)
anyway ... we make caramel popcorn, candy-cane crisps (wow, those are good), fudge, seven-layer bars, shortbread, fruitcake (actually, that was made on stir-up sunday, but we make them in small loaves to give away), toffee, pretzel kisses and sweet/spicy nuts. We do these for gifts ... and BOY do my kids get Grinchy about that !
I also try to find one or two new ones for the family to taste-test before giving them in the goody bags.

We usually make Marshmallow Mint Fudge, Mocha Fudge and Toffee Nut Fudge along with homemade lemon pecan biscotti and chocolate macadamia nut biscotti to give away but since we have all been so sick this month, I decided I'm not risking spreading the germs. The kids make haystacks and my husband makes his Awesomest Chocolate Chip Cookies (named by my kids) and if I feel up to it, I might try my grandmother's Czech apple strudel.
Um, Mary...candy cane crisps? Recipe? Pleeeeeeeeease! Or you could just send some!

My fudge is a basic recipe that I add different flavors to. Toffee Nut fudge is just the basic chocolate fudge with toffee chips and toasted almonds mixed in. Without the nuts, it would just be toffee fudge would would still be yummy.

jingle balls are small balls of biscuit dough rolled in a cinnamon and sugar mixutre and then baked. Pretty simple, my oldest two girls requested them and they will be the ones to make them if/when they get made.

Oh and the bourbon balls mix is resting so that the liquid will absorb more and make making it into balls easier
And I'm resting right now in the middle of spooning cream mints onto a tray (orange-mint flavor)

Depending on what else gets done today FIRST (so like Jodie, no guarantees :), here's the partial list:
Korova or World Peace cookies
Walnut cups
Snowballs
Springerle
Rainbow cookies
Rum balls
Peppermint Bark (okay, I guess that's not really a cookie)
Butter cookies (for the kids to decorate)
Cranberry-Pistachio Biscotti
Linzer cookies
Gingerbread (this year we're making BIG ones to make use of our giant cookie cutters)

Oooo ... Jodie can you post the bourbon ball recipe?
Here's the candy-cane crisps:
MaryG wrote:
Candy Cane Crisps – preheat oven to 325
1 cup butter, softened
1 cup powdered sugar, divided
1 1/2 teaspoons vanilla
1 1/3 cups all-purpose flour
1 cup rolled oats
1/2 teaspoon salt
3/4 cup coarsely crushed peppermint candy canes – about 6 big canes
Preheat oven to 325 F. In large bowl, beat butter and powdered sugar until creamy; beat in vanilla. In another bowl, stir together flour, oats and salt; gradually add to butter mixture, blending thoroughly. Add all crushed peppermint candies; mix until well combined. Drop by spoonful onto greased cookie sheet; chill for about 20 minutes (in freezer). Bake 18 to 20 minutes or until edges are lightly browned. Let cool on baking sheets 2 to 3 minutes; transfer to wire racks to cool completely. Store in airtight containers.

These are so good ... we always leave some candy cane "chunks" so that they melt and turn the cookie a glossy pink in places. They are so good ... I've tried doing mint extract in place of the vanilla ... but the vanilla combines better with the candycane mintiness and the cookies are the best.
Youngest asked "can we please just have one each" ... and I explained: the whole point of making treats for others is so that WE can sample them all and make sure they're good -- it's called "quality control" in the corporate world!

I was going to bake today but since I make mostly my own favorite things I thought it safer to wait until next week. The only person I'm shipping to doesn't want it until Jan. 8th. My list:
chocolate walnut cookies
shortbread
peppermint patties
coconut fudge
toffee
toffee-covered nuts
molasses cookies (crackletops?)
bourbon balls
And I make a big batch of caramel-pecan rolls for Christmas and Epiphany. This year I was careful to make a master shopping list because I had to run to the store so many times last Christmas. I need 7 POUNDS of butter. Is that awesome or is that kind of sick? I don't think we'll be eating most of this stuff.

Bourbon Balls
3 cups finely crushed vanilla wafers (about 75)
2 cups powdered sugar
1 cup finely chopped pecans or walnuts
1/4 cup cocoa powder
1/2 cup bourbon (or other hard liquor of choice.. rum is good)
1/4 cup light corn syrup
powdered or granulated sugar
Combine wafer crumbs, finely chopped nuts, powered sugar and cocoa. Blend in the bourbon and the corn syrup, mix well. Shape into 1 inch balls and roll in powdered or granulated sugar. Store tightly sealed. Better if left to "cure" for at least a day or two.
note: I left the mix to set overnight in my refrigerator garage and it'll be much less sticky to work with today.

The oats in that recipe surprised me Mary.. very interesting. I use a spitz cookie dough and mix in crushed peppermint candy and then shape them into candy canes for baking. I love how the candy gets soft in them.

My list - and as Jodie said, no guarantees...
Chocolate chips
Sugar cookies
Rogelach
Lemon cheese logs
That's such a short list! Then why do I find it difficult to do? Maybe because some are double batches?
Granola and fudge for gifts

Jodie, it's a cookie - cream cheese, lemon zest, walnuts, shaped into log shape, then one end dipped in chocolate.
