The other day ds and I were walking our dog before breakfast and I noticed my son shivering. Could Fall actually be here?
Back at home I made some pumpkin bread and pulled out the apple cider. For dinner we had french dip sandwiches and homemade applesace. The days are still warm but Autumn is definitely on the way. What are the foods that sing Autumn for you? Inculde recipes!

I'm jumping ahead with this recipe, it is really more winter but it has chocolate, I couldn't resist....

Hot Cocoa
11.5 oz bag semisweet chocolate chunks (I used chips)
1 to 2 tablespoons cocoa powder
15 oz can sweetened condensed milk
1 cup boiling water
3/4 Cup sugar

In a heavy medium saucepan placed over low heat, slowly melt the chocolate with the cocoa, condensed milk, boiling water and sugar, stirring to combine. When the chocolate is melted and all the ingredients are combined, remove from heat and let the syrup cool. May be stored in the rfrigerator for 10 days.

To make hot cocoa, pour 2 tablespoons (I had to scoop) into each mug. Pour scaleded milk over the syrup and stir to combine.

I really love this Pumpkin Bread that my friend Michelle makes.

Best Ever Pumpkin Bread

It's not gooey which I really like. Also we've substituted (whole wheat flour, applesauce for oil) with success. Maybe I'll ask her to post the "healthfuller" version.

Scones and Earl Grey tea are staples through the fall and winter. Fall snacks are tough on the waistline, but so yummy.

I made a few dozen pumpkin muffins and applesauce scones on Saturday to supply us for the week. Tea is constantly flowing here also. Mary Chris, could you share the french dip sandwich recipe?

My French Dip is VERY easy, and quite yummy!

In the crockpot I dump a rump roast from Costco, two cans of Progresso French Onion Soup (any type of french onion soup will do), beef boullion or broth,and a couple shakes of worchester sauce. The original recipe called for a can of beer, but I usually skip that. Then just let it cook all day. Serve it on rolls with bowl of "juice" for dipping.

OH this sounds yummy Mary Chris. I have a great recipe for broccoli cheese soup if anyone is interested. Fall is that time of year that I pull out all my easy soup recipes. Soups make wonderful meals with a salad and a homemade loaf of bread or rolls. Plus, most can be made ahead of time in big batches and frozen.

Well, I sort of cheat Instead of baking the apples whole, I slice up a batch, arrange them in a foil-covered baking dish, add dots of butter and a bit of brown sugar, LOTS of cinnamon and nutmeg (the spices of the season, of course!), and bake for 30 minutes or so. My husband likes them nice and soft, and I love them straight out of the dish or added to oatmeal (or over ice cream--yum! ). With a little less brown sugar, it also makes a great accompaniment to pork dishes, oddly enough. And they're easy to make in a toaster oven too.

I happily pulled out my large stock pot this week. I make soup once or twice a week all winter and always double the recipe and freeze half right away. We eat out so much less in the winter because we have "fast food" in the freezer. I don't have time to get specific recipes out, but we love most of the soups in the Moosewood cookbooks. I buy a lot of frozen veggies in bulk in the winter, too. I figure they are probably healthier than the "fresh" stuff that is mysteriously available in January. Since soups are cooked to death, frozen, and reheated, the frozen veggies always taste great.

Also, for a sweet teatime treat (we try not to do sweet everyday) in a pinch, I make up a pie crust and sprinkle it with brown sugar, cinnamon and raisins. I'm allergic to a lot of fruit, but I bet lot of autumn fruits would taste good in there. Fold them over, pinch the edges and bake them at about 375 for fifteen minutes or so. My ds asked last night for "some raisin tart things."

I love autumn . . .

I love these pumpkin cookies!

INGREDIENTS:
1/2 cup butter, room temperature
1 1/2 cups granulated sugar
1 egg
1 cup pumpkin purée (1/2 of a 16 ounce can)
1 teaspoon vanilla extract

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt


powdered sugar (optional)

PREPARATION:
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in pumpkin, vanilla and egg.

In another bowl, sift together the flour, baking soda, baking powder, cinnamon, and nutmeg, and salt. Stir flour mixture into the creamed mixture.

Drop cookie dough by rounded tablespoonfuls onto greased baking sheets. Bake at 350° for about 15-18 minutes, until set. Cool for a minute; remove to racks and continue to cool.

Optional: dust with powdered sugar or make a glaze
(but I think they are great without the extra sugar!)

Here's a fave at our house...they'll eat this more than regular chili!

Pumpkin Chili

2 lbs ground beef or turket (we have done the turket...very yummy too!)
1 medium onion, chopped
1 cup canned pumpkin
1 28oz can diced stewed tomatoes
1 16oz can kidney beans, drained
1 12oz bottle chili sauce
1-2 TBsp chili powder (I usually just do 1 to not be too spicy)
2 tsp pumpkin pie spice
1 tsp brown sugar
1 1/2 tsp salt
1 tsp pepper

In a large Dutch oven or soup kettle, brown the ground beef or turkey with the onion. Drain any excess grease. Add the remaining ingredients and stir well to mix.

Bring to a boil, then reduce the heat and simmer for 1 hour. Ladle into bowls and top with grated cheese if desired. Makes 8 cups.

Very yummy and smells wonderful!

Maria -- I'd love your broccoli cheese soup recipe! I too love soups during Fall -- especially if it can sit on the stove/crock pot while I'm rushing around doing things to keep warm !

I can't do anything pumpkin -- the consistency of pies, etc just makes me turn ! I do love mince pie though and Derby Pie (with a shot of bourbon and choc chips YUM!) is the BEST!

I'm just so looking forward to being able to turn on the oven -- dh, coming from Baton Rouge, won't allow the oven to be turned on till the outside temp is below 60! Looking like it's gonna be soon when I can start bread-baking and my fav subject, cooking math!
