We tried these and they work great! I wish I had known about this way of cooking eggs all those years we were camping:

Use a quart size Ziplock freezer bag. Add 2 eggs and whatever omelet fixins you choose (chopped mushrooms, peppers, cheese, etc.) Close bag, removing all air and gently mix ingredients. Place bags in rolling, boiling water for exactly 13 min. You can cook 6-8 bags at once in a large pot. Remove and pour eggs onto plate.

Me too! And you could do them up at home and store them all in a larger zip-lock bag. Great idea!

I recently found out that this is what restaurants do for their bfast buffets. They boil a huge bag of scrambled eggs for the buffet.

These are the kind of tips moms of big families (and campers) need!
