Here's a simple one:
Polish kielbasa, sauerkraut and pierogies for dinner.

Marybeth,
Are you close to Polish areas of Chicago? Seems to me you'd find some great celebrations there of this saint. I love the Polish churches that I've visited, like Pittsburgh, Johnstown...
I'll put on my thinking cap and maybe have some others. I'm not Polish, but I love the Polish traditions and their deep-rooted faith. I made it for the 1993 Czestochowa WYD and was in awe.

I do so love Poland myself. That is great idea about the Polish churches. We have a beautiful church in the city which many homeschooling families attend. I am going to see if anyone is heading out there tomorrow.
I am thinking of making sausage soup tomorrow b/c while in Poland I fell in love with all kinds of homemade soups. Can one fall in love with food!?!

I bought some yummy Polish mustard yesterday to use for the Polish feast today! Let us know what you did for the feast, Marybeth.
I have some chicken thighs I need to cook today, so I was wondering if anyone had some Polish poultry (stew?) recipes?

I checked in my latest copy of Saints and Feast Days and one of their ideas was Make a Mercy Wheel: The message Jesus wanted Faustina to spread was about God's mercy, but also about the mercy we must show to every human being. He told Faustina that mercy toward others is unquestionable proof of love for him. Jesus gave Faustina three ways of showing mercy toward neighbors: by deed, by word, and by prayer. Discuss these ways of reflection Jesus' mercy. Draw a mercy wheel that is divided into three segments: Deed, Word, Prayer. Have the students suggest specific ways that they can bring mercy to others.

Oh, I just am so excited by the Mercy Wheel! We printed off the coloring sheets for ds from the sites listed. They were wonderful. Thanks Michele and Jenn!
We talked about mercy at dinner and am very glad I found my Divine Mercy picture from Poland. Imagine that...something in my house in the exact spot it should be!
We had Polish sausage and etc. for dinner..yum!
St. Faustina...pray for us!!
Anyone notice how many little girls in the last few years are named Faustina and Jacinta....I love it.
