Hi everyone -

I'm about to go on a search for some kind of chicken casserole recipe - we're up this Saturday for a turn at our local soup kitchen.

For our share in the work we need to bring enough to feed about 20 people.

Our group decided on some kind of chicken-noodle casserole that would incorporate some veggies like peas and carrots. If you have a tried and true recipe for a crowd let me know! Thanks!

Our favorite chicken casserole for big crowds is the Chicken Tetrazzini recipe from the Once A Month Cookbook:

Chicken Tetrazzini
10 oz. dry spaghetti
3 cups grated monterey jack cheese
3 Tbsp. margarine
1 1/2 cups finely chopped onion
1 can cream of mushroom soup -- (10 3/4 oz)
1 can cream of chicken soup -- (10 3/4 oz)
1 (10 3/4 oz) soup can milk
1 c. chopped bell pepper
3 cups cooked diced chicken
salt & pepper

Cook spaghetti as directed until al dente; drain. Sauté onions in margarine. Mix onions and remaining ingredients with spaghetti in a large bowl. Put mixture in containers and freeze. To prepare for serving, thaw tetrazzini and put in a baking dish. Bake uncovered in a preheated 350* oven until bubbly, about 30-40 minutes. Makes 12 generous servings. Everyone usually loves this and comments on how delicious it is...Many prayers for you in your work for the poor.

Here's the one we make for our local shelter:

4-6 deboned chicken breasts (or equivalent amount of chicken), cooked and cut up.
1 lg. pkg. egg noodles, cooked and drained
1 16-oz pkg. frozen broccoli, cooked and drained
2 cans condensed cream of chicken soup
6-8 slices American cheese

Place noodles in pan (we use those large, deep aluminum foil pans - it's around 13x9x4). Cover with broccoli, then with chicken. Spread soup over casserole. Top with cheese. Bake at 350 degrees for about 1/2 hour.

Tip: It is easier to bake casseroles in disposable pans if you put them on a cookie sheet; sometimes the pan's sides bend and food oozes out as you are moving the casserole to and from the oven.

*We then cover the pan with foil and freeze it for use in the soup kitchen; I don't know how long it takes them to reheat it.
