The board is going to be closing for Holy Week and no one has asked this question yet......
We are going to be spending the day with dh at Busch Gardens, I know not very holy. We are going to be with dh,. it is the last time we will all be together before he leaves the country so we wanted it to be fun and happy. I think God will understand. So I want to live vicariously through your yummy menus as I am eating who knows what.......

We're having whatever my Mom makes. I don't know if I *ever* cook for a holiday of any kind!!
My favorite thing served is asparagus with an eggy-mustard sauce (I'm such a gourmet with my precise recipe terms). Mmmmm... it's yummy!!

I think it's called Hollandaise sauce.
Mom is hosting this year for us, too. We usually kibitz over the menu and help in small ways. Easter isn't about the food usually. We're having roast beef, mashed potatoes, corn, asparagus, green salad and lamb cake. Haven't decided on appetizers.
I'm making two lamb cakes. One cake isn't enough to serve for all, and I wanted my son to have the joy of being able to eat the cake this year. So I'm making an allergy safe one with chocolate cake mix from Craving Place.
Next will be Elizabeth's delicious lamb cake and frosting recipe. Someone asked if I was going to make my yummy lamb cake, and then I had a brain freeze and couldn't remember what recipe I used. That's when I was glad I blogged I had used that recipe, so I would remember this year. Whew! I'm now becoming my mother. I can't remember from year to year what I make.
I'm going to try to not punish myself for not baking some fabulous Easter bread this year.

Oh, Mary Chris! I think it will be a good distraction! Being with family is the important thing.
You've got plenty of time to do an Easter menu later if you're craving something. We've got 50 days of Easter season, and the octave is held as eight days the same as Easter day!

A couple of days ago, when I asked DH what he wanted for Easter, he said turkey. He was supposed to say ham! He thought it would be easier on me since we already have a turkey in the freezer.
Right now, I am seriously considering fish. Lately, I am constantly craving fish, so I need to take everyone else into consideration too before I finalize plans.
One thing is set in stone, like Jenn, I will be using Elizabeth's lamb cake recipe. It is so delicious! I'm considering making it into a large cake (maybe a cross cake) because the little lamb cake doesn't last long and there are never left overs.

I'm hoping Bill will make this steak with a mushroom sauce that requires him to set it on fire (I'm like Maryan about recipes ). Mmmmmm, lamb cake.....might have to go buy a pan. I'm serving breastmilk, I hope.

I hope you have great weather at Busch Gardens, Mary Chris! I can remember going to the zoo on Holy Thursday with some family, and I thought the same thing all day, "this doesn't feel right" but I knew it was important to be with family. Have you scoped out the restaurants? I remember a BBQ place that was soo yummy there. I think it was in France?
I don't think I have ever cooked for really special holidays either, a little like Maryan! On my DH's side, my FIL does all the holiday cooking. As Jenn said, mom does the main meal, and we pitch in for the other parts. I usually dig through my Pampered Chef cookbooks to find some yummy appetizer (or whatever I am craving at the time ).

Well, my sister is the only relative close enough.. so her and her family will likely come here.. my general plan (always subject to tweaking) is

Dinner:
ham
mashed potatoes
green beans
carrots
deviled eggs
braided bread loaf
jello salad (I'd like to make one that's a mold with sour cream mixed into half the jello)

Whatever else, there will definitely be loads of strawberries and asparagus, something lemon-y at brunch (like lemon bread), mashed potatoes (because dh doesn't like potatoes , so for holidays I indulge the dc with my super-duper specialty mashed potatoes), and dessert will be cream puffs. These are super quick to make and use plenty of eggs (which seems just right for Easter). We split them and fill the center with vanilla ice cream, top them with fudge sauce, and serve with generous portions of lovely fresh strawberries alongside.
Oh, my, am I ever making myself hungry!

In my house, this would mean we would have the extra pleasure of seeing the fire department visit us!! Bill is talented!

Well, I usually make a roast lamb,with roast new potatoes and assorted veggies. And home-made incredibly decadent Cinnamon rolls for breakfast. But I'm not sure this year as I will be flying home the day before.Hopefully I'll get a chicken in the crock pot before mass, dd can make a salad, and that will just have to do this year.
Do jelly beans count as a side dish?

Is asparagus in season yet? Lots of asparagus talk, which I love asparagus, but it seems early. I lost a month in Feb though with the flu; so, maybe its not, lol.
Lots of good ideas. I actually kind of forgot about it. We just had our part of a cow delivered; so, we'll probably have steak or roast beef. I'd like to try lamb, but dh thinks he doesn't like it. There's about a million things he used to think he didn't like but had never had prepared well, but someday I'll talk him into it...

This year, I will be making my first leg of lamb. I have never cooked lamb before, so I am a bit apprehensive. My neighbor has a Greek recipe that she has assured me is easy to make. She also says that the butcher can prepare the lamb for me as well. This takes a bit of the stress off, I suppose.
I am thinking I will probably serve roast potatoes and carrots, asparagus (if I can find it), broccoli, a hugh tossed salad, and fruit salad.
We made the lamb cake last year, but unfortunately, my pans are in storage . So I will have to find a creative dessert to make.
I do know that on Friday (or perhaps Thursday evening), I want to make hot cross buns. I have a new bread machine that has a recipe for them. I remember making them when I was a teenager and it took me the whole day. If I can make it in the machine ...

Lemonade pie
And some sort of Chocolate dessert.

My mom is doing the splurge and ordering one of those Heavenly Hams. My oldest dd would die without deviled eggs as she begs for them at every holiday/feast day/bday...but we only do them Easter.
My dh likes to call this the picnic feast with ham, eggs, coleslaw, mac&cheese for the picky eaters and maybe some sort of potato, oh and of course my mom's broccoli salad.

We've hardly ever been traditional at Easter. We're having a low country boil with shrimp, kielbasa, potatoes and corn (oh, and king crab legs for my future SIL who does not like shrimp). Easy cooking (outside) and easy cleaning (eat on newspapers covering the table).
