What is your method for hard boiling eggs. I never do this because I don't know how , there are to many ways.

I really want to start adding some eggs for extra protein in salads, and I think this is a good portable choice for my non cheese eating ds.

I had to look it up when you guys came over for lunch this past fall! Then did it for the last two months of my pregnancy for protein!

I fill pan till it covers the eggs with COLD water. When it starts boiling, I put the timer on for 15 minutes. When it's done... I drain, soak in cold water until it cools.

It seems to work!

cold water and eggs

heat to boiling.. boil 5 minutes.. remove from heat

leave in hot water 15 minutes

dump hot water and rinse in cool water until cool (to stop the cooking)

put eggs in pan, cover with cold water, set timer, 15 from when I start the heat. Perfect every time!

I also use cold water but only set the timer for 10 minutes from the time they reach boiling. If you don't want them to go green around the outside of the yolk, plop the eggs into ice water as soon as the timer dings.

I eat hard boiled eggs at least 2-3x a week now. Put eggs in cold water. Bring to a boil. Turn off heat, cover pot for 18 minutes. Rinse with cold water. enjoy!

Thank you all for the advice. I started with cold water and eggs, put them on to boil, took them off the heat and let them sit for 15-18 minutes, then ran cold water in the pan for a few. Perfect!

I am now enjoying my version of what is known as the Maryan salad....spinach, spring mix, feta, hard boiled egg and a few craisins. YUM!

If your eggs are from a farm, make sure you let them age a few weeks. Our fresh eggs, even 2 week old eggs peel messily after cooking.

I always used the Emeril method..place eggs in cold water bring to boil for 2 min...cover and remove from heat for 11...place under running cold water until cool...peel and eat!
...at least that is the way I REMEMBER being told...works for me! LOL!

I have found that it's difficult to mess up hard boiled eggs. I usually use the eggs in cold water, bring to a boil, boil for about 7 minutes method. Then I leave them in the pot until I get around to putting them away . I have, in the past, forgotten that I had eggs boiling and they probably boiled for half an hour before I remembered! Anyway, except for 2 exploded eggs, these eggs were fine hard boiled eggs as well.

Here is my method:
1. Put some water in a pot.
2. Put some eggs in.
3. Or vice-versa.
4. Put pot on stove and turn the burner on high, just to get it started.
5. Go read some blogs.
6. Completely forget about eggs until dc says: "Mommy, what is that smoke coming from the stove?"
7. Run over to stove, grab pot of eggs and what's left of the boiling water and pour into sink, breaking a few eggs in the process.
8. Forget steam=HOT and pick up egg.
9. Burn fingers, drop egg back in sink, breaking egg in process.
10. Run cold water over eggs.
11. Break another egg and peel it to see just how bad the damage is.
12. Eggs are perfect.
13. Eat egg and pat self on back for job well done.

Your mileage may vary.

oh I just remembered...we're at a high enough elevation that the boiling for 5 minutes was because just bringing to a boil didn't get them cooked enough.. so I added time while boiling.

okay, does it matter how MANY eggs you are cooking? (Does if affect the time?)

We had _just_ moved into a brand-spanking new house and I left 4 eggs to boil... forgot about them and they exploded into a bazillion pieces all over everything, from floor to ceiling. That kitchen wasn't even dirty to begin with!! One of the stupidest things I've done.

And they have to cook even longer here - the higher the elevation the longer the boil/cook time.
