We are cooking a meal for the FOCUS group here at the local university. They have families come in and prepare a meal for about 30 students and staff on Sunday after they return from Mass together. We have done it a couple times before and I'm trying to think of something different to make than we did before. Since it is such a big group I was thinking something like drumsticks would be easy and they are on sale pretty cheap this week. Does anyone have a great marinade or seasoning idea other than just plain baked or BBQ sauce? Thanks.

Mary, I have a great recipe for Parmasan drumsticks from Saving Dinner. My neighbor has the book right now, let me get it from her and I'll share the recipe in a bit!

We like Lemony Herbed Drumsticks, and I've had a couple other friends make it and like it too:
Make marinade:
1/4 c. lemon juice
1 c. apple juice (for adults I use white wine)
1 T. Olive Oil
1 onion, chopped
2 cloves garlic
1 t. dried rosemary
1/2 t. salt
1/4 t. bl. pepper
Marinate 3-4 lbs. drumsticks 4-6 hrs. or overnight. Transfer chicken and marinade to crockpot. Low 6-8 hours. I've done large quantities in a roaster and also done it in the oven.

Parmesan Drumsticks
1 cup Parmesan cheese
3 teaspoons oregano
2 teaspoons paprika
Salt and pepper to taste
1/4 cup butter
1 tablespoon olive oil
12 drumsticks, no skin
Preheat overn to 350
In a bowl, combine parmesan cheese, oregano, paprika, and salt and pepper.
Line shallow baking pan with foil.
In a small frying pan, melt butter and oil together. Dip each drumstick in the butter mixture, then in the cheese mixture, and place on the foil-lined pan.
Bake drumsticks for one hour or until chicken is completely cooked.

You can't get any easier then pouring Ranch Dressing all over them, they are so good this way! Pour Ranch over drumsticks, cook, you're done. We eat them with a fork; they are a bit sloppy.

Thanks everyone! Some yummy sounding ideas. Of course I had to do this yesterday already. Even though you weren't able to post the recipe, Lisa, since you told me the cookbook, I went to B&N and copied it down. So that is what we tried yesterday. The students really liked it. Now I have to try the others myself as well.

Oh good, I'm glad they liked it. My kids gobble it up! Sorry it took me so long to post the recipe, neighbor was out most of the day Saturday.
Suzanne, your recipe sounds really good, think that would work w/ a whole chicken?

This is one of my favorite recipes for chicken and my kids love it...If it gets easier than this, you will have to let me know.
We affectionately refer to it as:
"Grandma Betty's Crunchy Skin Chicken"
Cover a jelly roll pan with aluminum foil for easy clean up. Preheat oven to 425 degrees
Place chicken pieces (with bone and skin intact!)onto aluminum foil covered pan and liberally sprinkle with salt and pepper. Place in an oven uncovered until fat is rendered from the chicken skin and it is a yummy golden brown color. The cooking time will obviously depend on what cut of meat you use, breasts taking the longest. The salt dries out the skin and the pepper leaves a zippy taste. (Other spices will burn at this temp, so if you would like to add something else, do it near the end of the cooking.)
I use the rendered fat to make a gravy and serve the chicken with noodles, mashed potatoes or homemade biscuits depending on how much time I have on hand.
Anyway, nothing can be easier than salt and pepper, right? (Is that a challenge? I guess the ranch dressing would be pretty close!)

We do a chicken dish similar to Maddie, escept that we use a vinigrette dressing (our youngest is allergic to milk). I have a big 12x17 baking dish, and put in enough drumsticks to feed the crowd, plus a chopped potato each. Pour the vinigrette over the whole thing (balsamic is our favourite!) and you can sprinkle it with parmesan if you like. Bake at 350* for about 45 minutes, or until potatoes are cooked through. Served with a green veggie and extra parmesan for the potatoes, and it's a very quick, filling and tasty meal
We use the same technique for one of our meatless meals as well, but substitute canned beans for the drumsticks and add carrots (I *love* one-dish meals!).
