We are having make your own taco salad tonight. The new Martha Stewart Kids magazine had a recipe for taco salad that my daughter is drooling over.    I have some nice looking strawberries and cheesecake for dessert.

Oooh, I love taco salad. The Cooking Light Black Bean Taco Salad with Lime Vineagrette is so awesome, if you want to try something different.

We're just having burgers tonight. I bought some rosemary-garlic potato wedges at Costco that I'll make also--will have to convince the kiddos that they're fries .

I am roasting a chicken on the grill. Keeps the kitchen cooler. I'll serve it at room temp with some salad and bread baking in the bread machine. Very simple and cool.

We are having black bean taco salad tonight! I have a leftover black bean salsa salad from yesterday. We'll start with that and add the rest! It's really, really hot today!

The lime vinaigrette sounds good Molly. If you get a chance, would you post the recipe here?

Dh is home, ever so briefly, and has mentioned brownies three times already today, so if he can find a flight that leaves after dinner, I'm thinking warm brownies and vanilla ice cream...

Here it is--so yummy and easy! I like to smash the baked tostitos and mix them right in.

Black Bean-Taco Salad with Lime Vinaigrette

With chicken, cheddar cheese, and black beans, this Southwestern-influenced salad needs nothing on the side except some iced tea. Fresh lime gives it a citrusy counterpunch.


Vinaigrette:
1/4 cup chopped seeded tomato
1/4 cup chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon grated lime rind
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon black pepper
1 garlic clove, peeled

Salad:
8 cups thinly sliced iceberg lettuce
1 1/2 cups chopped ready-to-eat roasted skinned, boned chicken breast (about 2 breasts)
1 cup chopped tomato
1 cup chopped green bell pepper
1 cup finely diced red onion
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
1 (15-ounce) can black beans, rinsed and drained
4 cups fat-free baked tortilla chips (about 4 ounces)

To prepare vinaigrette, combine first 11 ingredients in a blender or food processor; process until smooth.
To prepare salad, combine lettuce and remaining ingredients except chips in a large bowl. Add vinaigrette; toss well to coat. Serve with chips.

Yield: 4 servings (serving size: about 2 cups salad and 1 cup chips)

I love all these recipes. I have a beef, pork and veal Lasagna in the oven (a joint effort between my daughter Mary and me) and plan to serve it with a spinach salad (fresh spinach, raspberry walnut dressing, sweetened dried cranberries, and a smattering of bleu cheese for mom and dad).
