I just printed out The Best Chicken Salad Ever that Angie recommened. I am going to pick up a rotisserie chicken after we go to the pool and use that in place of chicken breasts. I think I will also pick up some croissants, melon and lemonade.
I am looking forward to a nice cool meal, it is so hot here!

I made moo shu chicken wraps the kids love them. I serve with Chinese noodles and steamed broccoli.

We had barbecued chicken in the crock pot and stir-fried green beans with pine nuts.

Tonight, we had a delicious tuna salad affectionately known in these parts as "Ratzinger Salad." My dear friend Elizabeth served the it the day Cardinal Ratzinger was elected Pope--thus, the curious name. Several of us were getting together for a playdate that day, but the moment news of the white smoke came, the quiet gathering turned into a "Pope Party" complete with a rousing chorus of "Happy Pope Day to You" sung by all the children. We were elated by the news and felt so blessed to be together to celebrate. Here is my friend's recipe:
Ratzinger Salad
One large can solid white tuna packed in water
Mayo (to taste)
Chopped fresh flat leaf parsley, about 2 tablespoons (optional)
1/2 or 1 whole diced yellow bell pepper
3 or 4 plum tomatoes, diced
1 pound cold cooked Gemelli shaped pasta (or any shape you like)
Mix all ingredients in a large bowl, and season with salt and pepper. This is one of the few dishes all six of my children will eat, although some of them pick out the yellow pepper. It pleases the adult palate as well.

I am so excited to try this recipe. Mary Ellen, do you use regular flour tortillas with it or something more traditionally Asian?

I was a minimalist today. Ds is sick and whiney, we had a repairman here almost all day, and it's HOT! We had grilled steak and Sicilian Potato Salad, recipe from Twelve Months of Monastery Salads , with some adjustments. I tried that out last week, and dh said it was a keeper...to add it to the "rotation."

Oh, last night I tried this recipe, Chicken with Artichokes. I didn't add the Feta Cheese, put it over brown rice. It was quite tasty. I would reduce the liquid water, I added a bit of white wine for taste. Mine didn't reduce well, but it still was good.
