Does anyone have some cold pasta/vegetable salad recipes you could share? I'm looking for recipes that have no egg, no mayo or mustard and no cheese, but ingredients like vinegar, olive oil, artichokes, beans, onions, peppers, tomatoes, olives and other fresh veggies. Of course, that list doesn't have to be inclusive, just a random list of foods I'm thinking of...

And while I'm at it, how about tomato salad recipes? I know it's a little early for garden tomatoes, but I'm getting all geared up...

I found a recipe that sounds like just the type of thing you are looking for. It is in the current issue of Martha Stewart Living, Everyday Food Magazine (May 2005, Issue 22):
Warm White Bean Salad
1 tablespoon olive oil
1/2 small red onion, diced
2 medium carrots, halved lengthwise and thinly sliced
1 medium red bell peper, ribs and seeds removed, diced
1 garlic clove slivered
1 can (19 oz.) cannellini beans, drained and rinsed
1 teaspoon grated lemon zest
coarse salt and ground pepper
2 teaspoons fresh lemon juice
1. In a small saucepan, heat oil over medium heat. Add onion and carrots; cook, stirring frequently, until onion is lightly browned, about 5 minutes. Add bell pepper and garlic; cook, stirring, until pepper is crisp-tender, about 3 minutes.
2. Stir in beans, lemon zest, and 1 cup water, and season with salt and pepper; bring to a boil. Reduce to a simmer; cover, and cook until beans have absorbed most of the liquid, about 10 minutes. Stir in lemon juice; season again with salt and pepper.
Per serving: 147 calories; 3.8 grams fat; 6.3 grams protein; 23.3 grams carbohydrates; 5.4 grams fiber.

Unfortunately, the only tomato salad I ever make is layered with fresh mozzarella. It is so simple, I suppose it doesn't count as a recipe, but my husband and children love it. You could make it and leave out the cheese.
Slice fresh tomato and layer with fresh basil and mozzarella (at least 3 layers of everything). Season with salt and pepper. Drizzle with olive oil and balsamic vinegar.

I have this very simple recipe from my friend Amy's Mom. Totally delicious.
Slice tomatoes in morning
Marinate with Italian dressing
Put in the fridge until dinner
We make this all the time in the summer and people rave over it. It is so embrassing to admit how easy it is!

Yum to that MS Everyday Food one. I missed that one. I'm not renewing my subscription because I wasn't able to use too many recipes. I loved to read it, but it wasn't too useful!!
Wish we could do the mozzarella, but I love the tomato basil salad combos, too.

I have a few of those kind of recipes...so easy, but so delicious, and when people ask, you have to 'fess up!!! I really am a minimalist in the kitchen...recipes need to be nutritious, fast and tasty!
Do you slice or dice the tomatoes?

Oh, I am sorry...we slice them.
I agree about recipes being nutritious, fast and tasty...sometimes it is hard to me to get the nutritious part down! I use to much prepared foods. (sigh) I am trying though to cut back for one of my New Year resolutions.
My m-i-l is a tough act to follow!

I recently ate this delicious salad at a homeschool get-together. I'm not sure if I remember everything in it, but it had wedges of cherry tomatoes, sliced cucumbers, broccoli and cauliflower cut up very tiny, olive oil and vinegar, lettuce, red onion, hmmm, I think there was something else... it tasted awesome! And I was told there was some kind of amino acid from the health food store in it, but I don't know if that affected the flavor or not.
I'm a big junk food eater, but I've been craving veggies lately (for the first time in my life)!

From the same issue of Everyday Food, I just found another simple salad:
Cherry Tomato Salad (serves 4)
Whisk together 2 tablespoons red wine vinegar, 1 tablespoon olive oil, 1/2 teaspoon course salt and 1/8 teaspoon ground pepper until combined and thickened.
Add 2 pints halved cherry tomatoes (or grape tomatoes), 1/4 cup finely chopped red onion and 2 tablespoons chopped fresh flat leaf parsley. Toss.
Per serving: 66 calories, 3.9 grams fat, 1.4 grams protein, 8.1 grams carbs, 1.9 grams fiber
The magazine also provided a tip: If you would like to reduce the strong onion flavor, soak the chopped onion in a bowl of ice water for 20 minutes and drain before combining with the other salad ingredients.
