I am sorry I am so erratic at getting this topic started we have had a busy but really fun few days!
I have Southwestern Pulled Pork in the crockpot for tonights dinner. I think we will put it in tortillas and top with sour cream. I will serve some fruit and probably a green salad along with it. It smells really good!

That sounds delicious! Could you share the recipe? I still have no thoughts for dinner tonight. Dh might just have to be satisfied with leftovers as we are winding down here before heading out to the beach next week. YEAH!!!

You know dinner is my problem meal of the day. Every time I think about making this I realize I don't have the boneless pork loin roast. I'm going to get one tonight, get my crockpot out of the garage , and give this one a go.
Have you ate this one before?

BTW, I still don't know what I'm making for dinner.
BAD, very BAD. I know, it's a problem I need to work on.
I do want to say that last night we had tacos.
Dinner was on the table at 6:45pm, which could be considered a miracle for me lately. Since dinner was at a descent hour....our kids were in bed at 8:00 waiting or me to come read to them. Which gave DH and time to sit down together and enjoy quiet time together reminiscing that we met 19 years ago yesterday.
(Not our wedding anniversary, but I love celebrating the day he came into my life!)
Well, I guess this didn't exactly fit under the what's for dinner thread, but......I'm chatty today.

Not sure if this is the same recipe Mary Chris is using.
Here's the one I have waiting for me to purchase the roast. LOL
Southwestern Pulled Pork
2 cans (4 oz. each) chopped green chilies
1 can (8 oz) tomato sauce
1 cup barbecue sauce
1 large onion, chopped
1/4 c. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
1 (2 to 2 1/2 lbs) boneless pork loin roast
Flour tortillas
Toppings: sour cream, lettuce, tomatoes
Place pork in a 3-qt. slow cooker. Combine first 7 ingredients and pour over pork. Cover and cook on low for 8-9 hours or till tender. Shred pork with two forks. Serve on tortillas and top with sour cream, lettuce, and tomatoes if desired.

I didn't find it!
What I did is, made a lemon cake, poked holes in the top and poured a mixture of frozen lemonade concentrate and powdered sugar over the top. It turned out yummy.
The Southwestern Pulled Pork I give a . My boys, who don't eat sour cream, thought it was to spicy. I used a tenderloin instead of pork loin, let's just say I will never volunteer to play Name your cuts of meat on the Dave Letterman show .

We had Greek Raffenio Egg Fires, with bread rolls and sald. A low fat yummy version of eggs and chips! Meatless, too
I love the pulled pork resipe - would it work with beef, I wonder. My dh is not a big fan of pork...
We are planning a meal with recipes from Madagascar for the weekend. We went to see the film Madagascar.

I know this is a bit late on the thread, but does anyone have good recipes for COLD dinners with lots of protein. Something that isn't too spicy for little ones but gives some interest for more daring types.
It's 90+ degrees here and will be that at least through Sept. plus very humid, so no one is interested in heavy, hot dinners. I'm not a great cook - still working on that one, so I always get a bit stuck in the summertime.

Here's one I made last night that was an absolute hit! I doubled it and it was GONE! We're not pimiento people so I didn't add these...
From Barbara's kitchen:
CHICKEN CAZUELA
8 ounces linguini, broken in half, cooked in unsalted water and drained
½ cup prepared chicken bouillon
1 can (4 ounces) chopped green chilies, drained
1 can (2.8 ounces) French fried onions
2 cups (10 ounces) cubed cooked chicken   ;
2 tablespoons diced pimiento
1 can (10 ¾ ounces) condensed cream of mushroom soup
1 cup (4 ounces) shredded Cheddar cheese
Preheat oven to 350*. In greased 8 x 12-inch baking dish, layer hot linguini, ½ can French fired onions, and the chicken. In small bowl, combine soup, bouillon, chilies, and pimiento; pour over chicken. Top with cheese. Bake, covered, at 350* for 30 minutes or until heated through. Top with remaining onions; bake, uncovered, 5 minutes or until onions are golden brown.
Makes 6 to 8 servings

Marychris, the pork sounds wonderful! I'm going to print out the recipe and try it.
We are having roasted chicken, roasted potatoes, peppers and onions, green beans and salad. It's finally cool enough here to fire up the oven!

First day of "relaxed" schooling for us.
I made something extremely simple to pop into the oven:
Chili Dog Pie
Unbaked Cornbread Mix layered in a 9x13 pan
Chopped hot dogs laid on top of cornbread
Pour chili on top
Sprinkle with grated cheese
Bake at 425 for 20 minutes
You can use a baking mix for the dough (originally it calls for this with 3 TBSP mustard included in the dough) but dh prefers cornbread and chili.
