I bought some steel cut oats from our coop. I understand they take a bit longer to cook than regular oats (I'm not talking about quick/instant oats here) when making them for breakfast.
I'm wondering if I can substitute them in my other oat recipes without changing anything? Granola? Granola bars? etc?

I'm pretty sure that you have to use quick cooking oats for if you are using them in recipes--definitely cookies and muffins but perhaps not with granola.

Also, if you let the oats soak overnight they cook up in about 10 minutes the next morning. I have also read that you can cook them in the crock pot over night so that they are ready to eat when you wake up!

I place my steel cut oats in a food processer when I need instant oats like in sloppy joes otherwise I just bake cookies, granola or even oatmeal (microwaved) without any changes in the recipe. Annie

OOH! I have a recipe for steel cut oats that doesn't take long!
From Better Homes and Gardens
Swiss Oatmeal
1 1/2 c. water
3/4 c. steel cut oats
3/4 c. milk
6 oz. (3/4 c.) plain yogurt
1/8 tsp. salt
In 2 qt. saucepan combine water and oats. Bring to boiling, reduce heat. Simmer, uncovered, 8 minutes (oats will not be tender). Remove from heat, let sit 5 minutes. Add in milk, yogurt, and salt.
Cover. Refrigerate overnight or up to 3 days.
To serve, heat on stovetop over med-low heat, stirring occasionally, until warm.
Optional add-ins:
3 tbsp. honey
1/4 tsp. apple pie spice or pumpkin pie spice
(I add cinnamon liberally to our bowls)
1/2 c. assorted dried fruit, added before you refrigerate
1/3 c. chopped almonds
sliced banana, when serving
I use rice or almond milk instead of that 1 1/2 c. water to boost the calcium levels, and I like adding frozen blueberries, walnuts, and honey when serving. I make this at night and it reheats while I'm making scrambled eggs so it takes no time in the morning, and only dirties one pan and a few measuring cups.

As far as oatmeal goes, I use the steel cut oats just like I would any others. The oatmeal it makes is a bit more *textured*, but I actually prefer that. No complaints from my children, either.
