I like the smaller size, too, for most things. I also like the half blank pages for some subjects but not for others (her creative writing notebook, for example, is fully lined.) I do use the full-size notebooks too, sometimes. I think dd's copywork notebook is full-sized because I want her to get used to writing on a full-sized page.
And we also just glue or staple in anything that doesn't fit on the page, for example this map Jenny wanted to include on her Alaska page:

Oh, and we usually spend the first day or so of school decorating the covers.

The only time it's been a problem is when I either use knockoff brand glue stick. (Elmer's really is better.) or I don't get the page in fast enough and the glue dries a bit. I like the purple elmers sticks for this reason.

If I'm worried the glue stick isn't enough, I use a q-tip to paint a thin line of tacky glue instead and that has never failed me.

Our actual copybooks are the fully lined ones, like notebook paper. I wanted to begin to get them used to writing nicely on that kind of paper. I do have a crazy love for those cheapie composition books, though I really couldn't fault my high-schooler for going for the 17-cent spiral-bounds . . . Still. I wouldn't have given them to somebody to write in! I love the durability of the "bound" composition books, as well as the look of them.

Oh, and yes, already we have ship pictures that I need to staple into the 10yo's Mr. Bowditch book. This may be 32 pages of ships . . . which is okay . . . though I'd love it if he captioned some of them.
